I've been trying to do a better job of eating right after I finish a hard run. I know how important it is to eat right after to give our bodies something to rebuild with - I'm not always hungry right after a hard run, but I'll at least try to drink a recovery shake. Yesterday, we both had waffles and an egg and veggie scramble.
I worked most of the morning on grading, then took a lunch break. I am officially obsessed with that Everything but the Bagel seasoning from Trader Joe's. It's SO good on veggies. You can order it online if you don't have a Trader Joe's. I think it's probably my favorite seasoning for veggies. That's all I put on mine and they're amazing.

These are addicting. I got them from Sam's. I love all the different flavors happening here. I haven't always been a coconut fan, but it has really grown on me.
I caught Lu mid-yawn. Or she's laughing.
We took a break from work and laid on the couch for about 30 minutes. She was partly laying on my face, so I couldn't move. I didn't hate it.
I shared the recipe below, but I made one of my favorite casseroles last night. I changed it up a little bit this time, so it's just veggies, but that's what I love about this - you can literally add anything to it! It's a spaghetti squash casserole and it's SO good and SO easy! And yeah, I totally topped it with ALL of the cheese. WIn-win. It freezes really well, too, so I made enough for us to eat for two nights and then freeze a night's worth.

Here's the recipe and the nutrition information. I just put everything listed here (half the cheese) into a big bowl, add garlic powder and basil seasoning, and mix it all together before putting it into baking dishes. I topped the baking dishes with the remaining cheese and cooked it at 375 for 40 minutes. That's it! This is also really good with ground turkey sausage in it, but you can add ANYTHING! Don't forget the eggs - with them and the cheese, everything stick together better.
Lu passed out on my blanket in her Dad's chair for most of the evening.
I've got some work to do on an article I'm co-authoring and I need to start on my presentation for my defense. I also need to get a little workout in and maybe go on a bike ride! We will see how the day goes. I have my longest run ever this weekend - 22 miles, so I'm taking it easy this week. I'm excited to knock out that mileage and see how I feel. I have a little over a month until my marathon.

Yesterday was my birthday, so I headed out for a little run before meeting my Mom for lunch. I made it a mile and then turned around. I just wasn't feeling it and my body was worn out. I did wear my new knit Torins, so it was nice to break them in a little, but I ran the mile back home and decided I was fine with two miles for the day.
Friday morning started with a final read through of my dissertation chapters. As I was reading, I started questioning everything I had ever written...soooo, I made myself skim them and just submit everything! I think Lu was excited for me to submit.
Breakfast yesterday was more egg and veggie casserole and a waffle. I am obsessed with Van's blueberry waffles. I cannot stop buying/eating them. I bought three boxes at the store yesterday. You can NEVER have enough waffles. Plus, they were on sale! (Friends in the area, go to Lucky's.)
I had a hill workout run yesterday that I did NOT want to do. I really tried to think of a way to get out of it. I had gotten up early and finished some work, but I just wanted to keep working. BUT, I knew I needed to run, so I made a waffle and put on running clothes.
This popped up on my Timehop yesterday. My Mom found this apology (scroll?) I had given to my Dad. I guess I was being a brat? I love that I called exclamation marks "exiting marks"....HA!
I still remember sitting in my 7th grade classroom when my teacher came in, crying, and told us about the attacks. My heart is with those affected by 9/11. I cannot believe it was 17 years ago. <3
This is the LAST week of dissertation work! I submit everything Friday. I am excited/nervous/anxious. I have a lot that I want to get finished today and Tuesday, but the rest of my week SHOULD slow down after that. We will see!
Let's rewind to Friday...Jake repotted some of our plants, so we left them outside over night. It was supposed to storm Friday, so I brought them inside and left them in the kitchen before I went to run. It looked like a jungle in there.
I had egg muffins and a waffle yesterday for breakfast. Lucky's has the most delicious syrup. If you live near one, try some! It's their self-serve and oh man, it is yummy.
When the sun shines in through these sliding glass doors, I pull our curtains shut to keep our kitchen cooler. I had just let Lu in through the open side and looked over at her afterwards. I'm not sure why she was looking in-between the curtains and not in the open windows...
