We have officially finished cleaning out our freezer - hip hip hooray! We had sweet potato and deer meat chili, and a spinach salad for dinner. The recipe for the chili is under Eats - I think the recipe has a different meat in it, but we usually use ground turkey. We both didn't mind the deer meat, but I think ground turkey is definitely our favorite. After dinner, we watched some Parks & Rec - Jake had NEVER seen it. It's probably my favorite show! He's loving it so far (or so he tells me - smart man)! I had some more number stuff to do with the data I spent all day analyzing...I'm the living worst with numbers, so Jake had to help me out a few times. But I finally got all of that finished, just in time to force Jake to cuddle with me. ; ) He looks thrilled, huh?
I had totally planned to run outside this morning, but when my alarm went off at 5, I looked at the weather and said heck no and decided to sleep in a little! I made breakfast and packed Jake's lunch. We had over easy eggs, and Ezekiel toast with almond butter, half a banana, and some honey. Oh, and coffee. All the coffee. I got the below picture from my coffee-loving man. I knew we were meant for each other when he could ALMOST out drink me when it came to coffee. Almost.
Here's what Jake is having for lunch this week!
As soon as Jake left for work, I went to the Y to run on the treadmill. I took yesterday off from running, so I was excited to get a run in. I also busted out my new Altras, which were AMAZING. I kept looking down to make sure I was running on the treadmill because they were SO cushy. Thank you, Brandi and Jake!!!!! My mom finished her spinning class right as I finished my run, so we got to sit and have coffee for a few minutes. Isn't she cute??
After my run, I got my lashes all fixed up, thanks to the wonderful Ashleigh Hale! Then I had a phone conference about the data I've been working on. After the phone call, I switched gears and focused on my third and FINAL Comp...which is due next Thursday. Gulp. I am SO ready to be finished with all of this writing! But I'm thankful to have this week off from work so I can catch up on everything. Also, if drinking coffee and eating chocolate covered espresso beans is wrong, I don't want to be right. I also snacked on some beef jerky, dried fruit, and cajun cashews. Yum.
I'm just now sipping on this yummy smoothie. It filled up the glass PERFECTLY. I love when that happens. That awesome glass came from my race last weekend; I love it. I'm still gross from my run, but I want to finish up some of this writing, so I'm getting back to work NOW! Happy Tuesday, friends!
I write about whatever is going on each day. I want to use this space as a place to document my dissertation and training journeys.
