Super short post today, mostly based around food. Yesterday was crazy busy! But of course I made time to eat...a lot.
I think breakfast is my most favorite meal of the entire day. Also, waffles and pancakes are definitely a current obsession.
I needed ALL the coffee yesterday. ALL. OF. IT. But, I am almost all caught up on my edits!!! Editing is hard, friends.
I worked until lunchtime, then I had more salmon patties, roasted butternut squash, and Nut-Thins and hummus. I am also obsessed with this new Sriracha Kimchi I found at Lucky's. It's SO good - it's what's on top of the salmon patties.
Another day, another rice cake with almond butter and honey. I think I like PB better than almond butter on rice cakes. Stay tuned - I'll let you know the final verdict.
We got free samples of this popcorn at race pick-up last weekend I just got around to trying it yesterday. It was SO good. It's popped with coconut oil, so you can kind of taste a slight coconut flavor.
I worked a little bit more, then I needed some chocolate. I told you, all I did was eat and work yesterday!
We had about 18 people over last night for a BBQ. It was a blast! Jake grilled burgers and brats and everyone else brought a side. We had quite the spread going! The weather was so nice, so we set everything up in the shop and played yard games in the backyard. I failed to get pictures - I was too busy talking and eating.
Holy cow, I can't believe it's Thursday! This week is flying by.
I'm going to finish up the last few edits I have for this chapter (hopefully), before my phone meeting to get my next round of edits. Have I mentioned how ready I am to be finished?? ; ) Next year is going to be so wonderful. I think those thoughts are the only things getting me through this editing process.
I have a couple of errands to run today, too. We leave tomorrow afternoon for my bachelorette party, so I need to get a few thing for that and I need to pack!
Happy Friday Eve!
I write about whatever is going on each day. I want to use this space as a place to document my dissertation and training journeys.
