Breakfast after our run Thursday - eggs and a sausage patty. I had my waffle before we ran.
I taught Thursday morning for a few hours, then got to help one of my besties deliver some bouquets. My friend, Cassie, is the ultimate girlboss. She owns Ozark Mtn Flower Truck! I am so proud of her and her business is awesome. If you live in the area, check it out! She has a truck that goes to all kinds of different places and people can create their own bouquets. She also has a delivery service, which is super handy. Also, look how beautiful these flowers are!
After I helped Cass, I ate my leftover BLT from Galloway for lunch. I added some leftover sweet potatoes, too.
I knocked out a bunch of grading and got caught up on other stuff, finished packing, made our dinners, and we hit the road! We drove 6 hours last night to Kansas, so I knew we wouldn’t want to stop to eat. We had sandwiches and chips in the car. These tortilla chips are delicious. I got them at Lucky’s on sale!
Two of my favorite things: chocolate covered strawberries and blueberry donuts. Jake said he didn’t see a blueberry donut at the store, but he got me a muffin and chocolate covered strawberries. Both were amazing. We shared the muffin after dinner. The strawberries were gone before we left the house...
We got to our hotel a little after midnight. We had planned to leave super early, so we brought our own breakfast, but ended up sleeping in a little. We still ate breakfast in our room! It was yummy.
We chugged some coffee and hit the road! Ready to be in Colorado!

I usually try to prep our breakfast ahead of time, but this week, we have been cooking them each morning. It has been kind of nice! I almost forgot the other morning, though. I get so used to my routine of heating things up, which hardly takes any time at all. Luckily, eggs don’t take very long to cook.
We ran out of toilet paper Wednesday morning. That never happens around here. I went to Sam’s and stocked up. Our guest bathroom is filled to the brim, so is our bathroom.
Everything was frosted over when I woke up, but by 10AM, it was 45° and sunny! I started in a long-sleeved shirt, but had to shed it after about two miles. It was BEAUTIFUL out. I couldn’t believe I was running in a tank and shorts in the middle of February.
I had some speedwork to do yesterday. It felt SO good. I ended with 8 miles for the day and I can tell I’m recovering faster after speedwork than I was a few weeks ago. Small progress is still progress!
Lu and I cuddled on the driveway after my run. She is staying with my parents while we are gone, so my Mom came to pick her up yesterday. I always get sad when she leaves. I know she loves going to my parents’, so that helps! I just want her to be with me always!
I was so happy to see the sun.
Anyone else chill on their driveway after a run? This is my favorite thing to do in the summer after a run. I’m sure our neighbors think I’m crazy.
A few people asked about the bars I made, so I thought I’d type up a little something and share them again. These turned out super yummy! They’re Pumpkin & Oat Protein bars.
My Mom came over and hung out for a little bit, then she took Lu to their house. Lu loves being on top of couches/chairs like a cat. She’s not supposed to sit there, but Jake is probably the only person who gets onto her...the rest of us need to.
We usually go to Galloway before heading out of town. We can’t go very long without their food, so if we are going to be gone, we have to get our fix before we leave. It worked out perfectly because I didn’t have anything for lunch today, so I saved half my BLT. I’ve been looking forward to having it since I woke up! Mmm.
After dinner, we finished packing up all our stuff and loaded the car! I haven’t been to Colorado in the winter since I was 15, sooo that was 15 years ago! Crazy. I can’t wait for some snowy runs. We are also going to go snow shoeing, which I've never done. I can't wait to tell you all about it!
Jake joined us gals on our run this morning. 60 easy minutes. Alex (right) and I both lifted yesterday, so our legs were feeling it this morning!
Our last Valentine’s Days - lots of running and relaxation with our girls. We are missing both of our girls today - Aspen in Heaven and Lu with my parents.
I’m off to teach then we are outta here! Next time you hear from me, I’ll be in Colorado!

Do you have an article of clothing or a pair of shoes that your significant other hates? Mine would be my Uggs. I don’t know how Jake could hate Uggs, but he does. A lot. I can’t stop wearing them, though. They’re just too cozy and easy to slip on. Sorry, Jake!
When I asked what else you'd like to see on the blog, a few people said I should share more recipes and more specifics about my training. I don’t have too many recipe to share today, but I included last week’s training at the end for you! I’ll do a round-up of all my favorite recipes and share them in a post soon!
Friday morning started with a coffee date with this babe. We literally live less than a mile from each other and hadn’t seen one another for like 3 weeks! It was so nice to catch up and sip delicious coffee. We both got coconut chai lattes and I’m craving it as I type this. It was SO delicious. I also got the biggest one they had...my caffeine addiction is serious.
I cooked Kohlrabi for the first time Wednesday night for dinner. It was super good! If you’ve had spaghetti squash, I’d say it’s similar with a crunchier texture. All I did was sauté it in olive oil and garlic, then top it with ground beef and spaghetti sauce. Super yummy! I got this package at Lucky’s - it was also a steam-able bag if you wanted to steam it.
Well guys, I did it! I signed up for my first 50k trail race. It’s not until November, so I’ve got lots of time to prepare. I am super excited, but also very, very nervous. Dogwood is a tough course, so I know it’ll kick my butt. This race series, which is put on by the Bass Pro Fitness Series, is one that I have enjoyed for years. There are a bunch of different races put on by Bass Pro Fitness Series, but within the Dogwood races, there are three distances - a 15k, a 25k, and a 50k. I have done the 15k and the 25k, so it’s time to knock out the 50k! Thinking about this upcoming race got me reminiscing about the past Dogwood races I did. I found pictures from each of them!
Did you guys see this article about a man that was attacked by a mountain lion while he was trail running? The man suffered some bites to his arms and face, but managed to get away from the mountain lion. Apparently he suffocated the animal. I cannot even imagine being attacked like that. Yikes. I’m glad the man is okay, sad for the mountain lion, but the man did what he had to do.
I asked for some tips about baking egg muffins and a bunch of awesome people suggested silicone muffin sleeves. I ordered some and they should be delivered today or tomorrow! I’ll share all about them once I try them out! I’m so excited to not have such a huge cleanup in my muffin tin.
Here’s a reminder to hustle for the things you want! Do something today that gets you closer to meeting one of your goals.

I can’t believe it’s February. 2019 is already going by quickly and we are just a month in. I hope your first month of the new year has been wonderful.
Friday morning started with Lu eating a stuffed zucchini out of the trash - HA! I shared a video HERE. She never gets into things, so she definitely knew she was in trouble. I had left the trash out to take it to our dumpster when Jake left for work, but before he left, he put it back into our pantry. He’s ALWAYS closing the pantry door and putting things back in there when I’m not done using them/need the door open. It drives me bonkers. Well, he did it Monday and it looks like he was right...kind of! I’ll never totally admit that. ; )
