I needed to stop and get dog food after school on Thursday - the store had set out these adorable Easter cookies, which I just couldn't pass up! They also had some super cute outfits, but I controlled myself. This time. I did grab four cookies to bring home, though. The pups went crazy! Lu immediately took hers under the bed, which is what she always does with treats of any kind. Thank goodness for big dogs that act like vacuums! There wasn't a single crumb left over. I was their favorite person for a solid two minutes. It was wonderful! : )
I was starving and feeling a little blah after school, so I lounged in bed for about an hour watching Shameless and eating some dark chocolate covered raisins and pretzels. Whoops! I didn't hate it.
I also got some major cuddles from my girls. Lu finally finished her cookie and came out from under the bed. She wasn't super thrilled about taking a picture with me and Aspen wouldn't look at me, so I took pictures of them against their will. Mother of the year!
We met Jake's parents for a quick drink, which is always nice! Then we met up with Nick and Ashleigh for dinner a little after 6. Before we knew it, we were looking at the time and it was almost 10:30. Whoops, again! We were just having such a good time talking! Jake had a burger with blue cheese, and sweet potato fries (mostly for me!), and I had a Caesar salad with tuna, no cheese, and a Caesar vinaigrette that is AMAZING. I was still a little full from my snacking after school...
Luckily, Ashleigh thought to take a picture - I was slacking, big time. She was holding up her phone to take it when I told her about the selfie stick I always have in my purse. I'm not even ashamed! She had never used one before, so I think she was pretty excited. I think she did a GREAT job!
But, Ash thought her picture was blurry, so we took a second. In my honest opinion, whoever invented the selfie stick is a genius. We also celebrated Jake and I meeting to have a beer and a Fireball shot exactly one year ago...hence the Fireball shots on the table. We are glad to have such good friends as neighbors!
Breakfast has been the same all week, plus some Bulletproof coffee for me! I think I'm going to start some Bulletproof intermittent fasting Sunday evening after dinner, so I'm trying to get back into Bulletproof before then. The combination of the two helps with sleep, stress, and focus. I think it will be the perfect reset for me after the crazy semester I had. Now that comps are finished, I feel like I have some more free time, so it's the perfect time to do some experimenting. I'm excited to see how it makes me feel. Once I start my dissertation, things are going to be crazy again, so I'm hoping this will help a little. I will post more about it once I start!
I used the self-tanning lotion I shared earlier this week and put some on my face. Well, it made me break out. Cool. Won't do that again! Just repping the Hawks on this drizzly day! I've gotten in a bad habit of throwing my hair in a ponytail lately...one of my girls the other day told me she loved my hair down, and then she asked if I remembered when I wore it down all the time because I should do that more. Middle schoolers...so sweet! Haha!
I was going through old pictures the other day and found this of Lu. She was SO not happy. Isn't she the cutest little princess?! I need to find this outfit ASAP.

I love getting messages like this! Alyssa always cracks me up - ALWAYS, and Casey is one of the sweetest people ever. Sometimes I feel silly posting about my every day life; I know not everyone is interested, and that's okay! But it makes me feel good to know that some people enjoy reading the blog. I know I love the blogs I read and I don't even know some of the bloggers.
We are having some friends over tonight and then we are all going to listen to some live music. We both need to get a long run in in the AM, so it won't be a late night, but I can't wait to see everyone! I'm so thankful Jake loves being around our friends as much as I do. And we have some of the best friends around!

Jake's little sister, Chelsea, is the sweetest. She has been sending us texts like this one all week. I love them! She is always so positive and has such an inspiring outlook on life. I love being name twins with her! <3
I LOVE to-do lists...I wouldn't get anything accomplished without them. I also love being so close to crossing off everything for this week! I feel like I'm a little behind on grading for some of the college courses I teach, so I'm working really hard this week to get feedback and grades back to students. Grading never ends! Ever.
I got this text from Brandi yesterday afternoon. She knew I was anxiously awaiting this package!!! She's the best!
Sometimes you just need to grab a quick beer after school before you get your lashes done. Getting lashes is probably the one thing I can't go without. They save me so much time in the mornings and I hardly wear any make-up anymore. I love them! Ashleigh at Lash Lab is amazing and she does the BEST work.
Then I rushed home to my new baby!!! Look how pretty she is. I couldn't wait to get everything unwrapped and charged.
I was a little worried about the size of the Garmin since I've gotten used to my Apple Watch, but I think I'm going to really like it! The 735XT hardly weighs anything; I wasn't expecting it to be so light.

We had the same dinner we had Tuesday - one-pan Paleo balsamic chicken & veggies. Mmm mmm mmmmm. I may have eaten too much...I was stuffed after this. It's just SO yummy. I posted the recipe under Eats, so check it out if you want an easy, quick, healthy meal.
I want to do this with our girls. Jake just rolled his eyes when I showed him. I'm going to take that as a yes! ; )
Aspen was tired, but needed to keep her bone within reach, I guess. She HAS to sleep underneath some type of blanket. We have some very high maintenance pooches. But I wouldn't want them any other way! I love how she has her legs crossed. She's very proper.

Woke up early, ready to try out my new watch!! I was tired this morning, so I felt like I was dragging my feet on getting out the door to run. But after a little coffee chugging, I made it happen.
I got 5 miles in and a mile cool down. I struggled with those 5 miles. REALLY struggled. I just felt heavy the whole time and at one point, my legs were so dead I thought I was going to just fall over. But, I got it in and will probably hit up some hot yoga after school to get a good stretch in.
So, for the past couple of days, every time I use the toaster, I say to myself, "You should wash that grater so you can move it before you cut yourself." Every dang time. Well, it finally happened this morning. I took a chunk out of my finger. Eye-roll. I'm going to blame my Momma because she got the grater for me. Seems fair, right? The grater WILL be washed and put away today.
Jake was pretty excited about breakfast. We love having a casserole already made - it definitely makes our mornings run a lot more smoothly!
Bulletproof coffee and breakfast casserole for me, too! The Sriracha this morning made it SO much better than the ketchup yesterday. Sriracha is definitely a staple for me.
It's Friday Eve!!! This week has flown by for me, which is kind of surprising. I usually feel like the closer we get to school being out, the slower the days and weeks go by. Especially after spring break! But the days are zooming and I'm not going to complain!
We are going to dinner with our friends Nick and Ashleigh tonight and I can't wait to hang out with them! Ashleigh owns Lash Lab, and even though I just saw her yesterday, I'm still excited! We are going to Galloway, which is another staple for Jake and me. Also, funny enough, tonight one year ago, Jake asked me to meet him for a drink at Galloway (thank you, Timehop, for the memory!). It wasn't our first date or anything; that happened a few weeks later, but I'll never forget sitting at the bar talking to him, thinking about how awesome he was. One year later and I still think that! <3

The chicken salad was AMAZING for lunch yesterday! I'm already looking forward to lunch today...caught up on some New Girl during lunch yesterday. If you haven't seen New Girl, you should check it out. It's such a feel good show! And it'll have you rolling!
Came home to some lounging pups yesterday. They are 100% not supposed to be on the couch...Lu obviously doesn't listen. I kicked her off after I got these pictures. I just think it's so cute when she lays up there like this! Aspen is the only well-behaved one.
For dinner we had balsamic chicken and veggies and it might just be a new favorite! I will post the recipe under Eats. It was SO easy to make and turned out SUPER yummy. Also, check out those chicken breasts. They're HUGE. Hormann Meats has some of the best chicken. We will have this again tonight - I love having dinner ready beforehand! This meal was also 100% Paleo, which was so nice. We both want to get back to eating more Paleo, so this was a good start! Jake is still feeling kind of crummy, but he is on the mend, which I'm thankful for. I also miss my running buddy, so I want him to be healthy ASAP!
I got this text last night - YAY YAY YAY! I can't wait to get a run in with my new baby. Thursday morning, it's on!
I tweaked my knee yesterday doing some squats (dumb), so I am not running today, which is annoying. Then, I rushed out the door this morning and totally forgot to put Sriracha on my egg casserole, so I had to resort to some ketchup I found at school. Totally not the same! I also left my second cup of Bulletproof Coffee sitting on the counter - I made one to drink as I was driving and another to drink all morning. I was SO bummed. Not off to the best start this morning!

I've been researching Intermittent Fasting, and a lot of people use Bulletproff with that, so I've gotten back into drinking Bulletproof. I love trying new things and learning about different benefits. Does anyone have any experience drinking Bulletproof or using Intermittent Fasting (IF)? If so, I'd love to hear your thoughts!

My friend Kallie is coming into town this weekend and I can't wait to see her! I think our friend Annemarie should visit, too! These are some throwback pictures to the Miranda Lambert concert we went to in January. It was SO much fun, I think we all just about lost our voices from singing so loud. All three of us went to high school together!

Since we got home so late on Sunday, we didn't have time to prep anything for meals (which we knew would be the case). Luckily we had the breakfast casserole I made right before we left, so we didn't have to worry about breakfast. We also made sure we had things for our lunches on Monday, but that was about it. I would like us to get back to being more Paleo again, so I'm working on that right now. Here is our meal plan for the week! I will post recipes under Eats as we make each meal. I make a slide like this each week and the slide after it contains links to the recipes, that way I can have everything in one place. It definitely makes it easier!
Lunch on Monday was my lunch from Friday that I left at home - it worked out perfectly! Leftover turkey and zucchini burger with beets and brussels (my favorite) and Sriracha. I started watching New Girl again from the beginning during my lunch time. I just LOVE this show.
I didn't get up to run Monday morning when my alarm went off because it was raining (lame, I know, but I didn't want to wash my hair!) and I was worn out from our weekend, but I knew I needed to get at least a short run in after school. I did 3 and it hurt. I can tell I'm not totally back to being healthy from my sickness. I hate how long illnesses stay around. Jake has come down with something now, too. Thank goodness it's different than what I had! I would feel SO terrible if I had gotten him sick. Poor guy. It was REAL sunny despite the clouds and I left my sunnies in the house. Lots of squinting! I was repping my Go Girl half shirt in honor of their half I'm doing again in April. I'm excited!
We went to the grocery store after Jake got home and decided to grab Cesar's while we were out. We LOVE Cesar's. I had three chicken tacos sans tortillas, which is what I usually get when we eat there. Sometimes I switch it up with the protein I have, but I really, really like their chicken.
After dinner, we went home to prep lunches for the week. I'm making a Paleo-ish chicken salad, which I will put into wraps for Jake and I will eat it over greens. We are having beets and brussels again with this...you can never have enough! I bought a rotisserie chicken to use in this recipe for the first time. We both sampled it last night and it was AMAZING. I wish I wouldn't have used the mayo, but sometimes you just need it! ; ) I am going to work on creating a recipe that doesn't use any mayo. We used to use plain Greek yogurt, but since I've switched to no dairy, I need to work on an alternative. I love avocado in chicken salad, but it needs to be eaten pretty quickly. Any ideas?! The last picture is our lunches for the day! Mmmm. Can't wait to chow down.
As I was prepping, Jake spent some time researching a new watch for me. I got an Apple Watch in November, but it's just not what I want, so I'm going back to Garmin. We were looking at the fenix 5S, the fenix 3 HR, and the Forerunner 735XT. Jake is the BEST at researching different items, so I'm glad he had some time to help me choose a new watch even though he was feeling really crummy.
I finally got up to my alarm, chugged some coffee, and got ready for a short run. I totally misjudged the weather (I was also excited to try my new gloves), so I got pretty warm. I took my gloves off after about half a mile, ha! I got 4.5 in, but I did not feel great during the run. I really struggled to stay below 9s. I have some work to do before my race! It did feel amazing to get a morning run in again. I have missed them! I definitely don't feel ready for my day without one.
I showered real quick and then made breakfast. I broke my piece of Ezekiel toast into a million pieces, but I didn't want to waste it, so I still threw it in the toaster. I thought I had set the pieces in the toaster in a way that would be easy to get out...NOPE. Jake came to the rescue, though, and got all of the pieces out! My hero.
After much research and discussion, we decided on the Forerunner 735XT!!! I just ordered it and it will be here TOMORROW!!! I cannot wait. I loved the fenix 5S, which isn't out yet, but I don't think I need something like that right now. Maybe in a few years! I think Jake wants to get the fenix when it comes out, so I will see what he thinks of it.
I'm trying to get motivated to work on an article I'm co-authoring with a research professor at Mizzou. It discusses some research she conducted which is really cool, so I'm enjoying the process. Ever since I submitted my comps, I haven't done much in terms of writing...it's just hard to make myself do anything. Maybe later today I'll want to...fingers crossed! I defend my comps in a few weeks, so I'm ready to get that over with. Mizzou is on spring break right now, so I don't have class Wednesday night. I'm pumped! 3 extra hours to do whatever I want!

We didn't get home until super late last night, so I didn't get a post in - I will do a long one today to make up for it. :)
On Friday, I dropped Lu off at my parents'. She was pretty dang excited to go for a visit - she LOVES it over there. She obviously did not care at all that I was sad about leaving her and her sister for the weekend. Her favorite spot is to be perched on the corner of their couch, looking into the backyard. I snapped this cute picture of my Dad looking out, too. Last time we were over, Lu spotted some turkeys in the backyard. She was ecstatic.
After I dropped Lu off, we finished packing, then were on our way to take Aspen to Jake's parents' when we decided we were hungry - story of our lives. We decided it was going to be pretty late when we got to Bentonville and we didn't want to be rushed to find something to eat, so we met Jeff and Penny for a quick dinner at FD's, which was so fun! They took Aspen from us at the restaurant, so we were officially furbaby-less and on the road around 7. Aspen didn't seem to care that I was going to miss her, either! We have two oblivious daughters.
We were so excited to see the tiny home we were staying in; neither of us has stayed in anything like this before, so it was an adventure. The home was ADORABLE, and within walking distance to everything, so that was super handy. The loft upstairs was pretty roomy and we figured three to four people could sleep up there comfortably. We unloaded our stuff, shoved the bikes into the corner (lovingly), and headed out to explore! Oh, everything was super comfy in the home except the mattress. Not great at all!!

As we were getting ready to head out for the night, my Dad sent me this picture of my Mom and Lu. They're just the cutest! Lu is definitely spoiled...
Off we go! It was sprinkling a little when we left, but we decided to hoof it. I'm glad we did, the rain stopped and it was fun to walk around and explore.
Our first stop was Core Public House, where I had the Toasted Coconut beer. WOWZA. It was amazing and smelled SO good. After our beers at Core, we walked to the new Scotch and Soda location, which was super cute! There, we of course wanted to get whiskey drinks. We made some friends and they recommended a new whiskey drink to me, but I can't remember the name. It was super yummy!
The next morning was chilly and rainy, so we lounged around and drank coffee, which we never get to do. It was wonderful to relax! We got hungry mid-morning, so we decided to venture out and find a place for brunch - my favorite meal of the day!!
We went to O & T, which stands for Oven & Tap. We started with their house donuts that came with an Onyx Coffee Lab coffee dipping sauce. They were incredible. Then we split a breakfast skillet, which was good, but not our favorite - we forgot to ask for no cheese and it was pretty greasy. But the flavor was good! And the service at the restaurant was some of the best I have seen - we were very impressed!
After brunch, it was still raining, so we went to the Walmart museum, which was fun and really informative. Jake was trying to crack the safe in this picture. After the museum, we decided to walk around downtown a little. It was sprinkling just a little, but it was really chilly. I was ready to stay inside and warm up for a little bit.
We decided to head to Bike Rack Brewing Co. It was perfect for a rainy Saturday! One of my favorite things in life is getting a flight, which is exactly what I did! We ended up staying at Bike Rack most of the day because we made friends and were having a blast.
Okay, now for something AWESOME. I posted about Yeyo's a little bit on Saturday, but I wanted to share some more information about him and his food because he is such an awesome guy! First, he brought us a sample of five of his tacos just to try. For free! They were incredible. Then, some of the employees at Bike Rack were eating flautas, which he also brought in for free, and they shared with us. HOLY COW. Everything was so delicious. We are VERY passionate about Mexican food, so we were stoked about getting to try all of this. We kept saying how fresh tasting everything was and soon learned that he grows all of his own produce! He also supplies a lot of different places with local produce, which is just super amazing. Celebrate Magazine just wrote a piece about Yeyo and all of the cool stuff he is doing, check it out HERE. We sat and chatted with him for awhile and he is the nicest guy. Definitely check out Yeyo's if you're in Bentonville. You won't be disappointed. Also, maybe bring me back a flauta... <3
We finally decided to tear ourselves away from Bike Rack and go next door to Pedaler's Pub. WE loved seeing some local Springfield restaurants, shops, and brews represented! Jake wanted to take a picture in front of PTD, we were bummed we didn't get to see any of the guys!
After Pedaler's, we grabbed drinks at the Foxhole, then went to Thai Kitchen for dinner, which was a suggestion made by one of our new friends. Holy yum. It was phenomenal. We got an avocado yellow curry with chicken and pineapple fried rice with shrimp. Both were delicious.
After dinner, we met up with one of our new friends back at Bike Rack to listen to some live music. The Taylor's were the entertainment and they're the cutest, most talented couple. Look them up on Facebook if you get a chance. They both have incredible voices. After Bike Rack, we walked around downtown a little, then decided we wanted to get up early to run, so we headed back to the tiny home and called it a night!
Neither of us slept all that great, but we started the morning with coffee and a short running/walking tour of Bentonville. We loved all of the trails in the area - so awesome.
After our run, we grabbed more coffee, then came back to the house to get cleaned up and load up the car. Bye, tiny home!!
For brunch on Sunday, we went to Pressroom. OH MY GOSH. This was maybe my favorite meal. I got the Ham Benedict and Jake got the Austin City Limits. Both were to die for. I'm not a big french fry fan, unless they're sweet potato fries, but I inhaled everything else!. We added Sriracha after I had taken these pictures. ;)
After brunch we went on a bike ride, and I got to watch Jake do some cool stuff on two wheels. He ended up teaching a group of guys some stuff, so that was fun to watch!
We finished out the weekend strong with this goodness. A big mess of rib meat nachos (I don't regret the cheese...too much) and some chicken thighs with white BBQ sauce. We got fooled thinking it was really BBQ sauce. Just a ranch and blue cheese mixture - super yummy! Then we were headed home to pick up our very excited babies!
I already want to start planning our next getaway...where should we go?!

We got all settled into our tiny home for the weekend. It's adorable! The weather hasn't been great today, so we put off our running and riding until Sunday. We have spent today exploring the town and making friends! One of our new friends owns an AMAZING Mexican food truck. He gave us this yummy food for lunch while we were sitting at Bike Rack Brewing Company. How cool is that?! Check him out. His food truck is called Yeyo's. I will write more about him later because he has an incredible story. But for now, just drool over these dishes!

Jake had an event with MORC last night - if you're into cycling, check them out! At the end of the meeting, there was a little bit of tricycle racing. I'm proud to say, my man did pretty dang well! Nothin' like seeing grown men race on tricycles! I totally requested he wear his lime green Julbo sunnies - I think they helped! He was so fast I couldn't get a good picture. Proud girlfriend moment. ; )

Today is the BEST day!!! There is a blog that I read religiously; I look forward to reading it every single day. It's called Hungry Runner Girl - you can find it HERE. She is so inspiring. She does something each week where she shares running accomplishments, so I sent her mine about the 15k I did a few weeks ago. I was featured today!! It definitely made my day!
I am feeling MUCH better today, almost back to normal - thank goodness!!! But I ran out of the house this morning and totally forgot my lunch. Palm to face. BUT, that gives me an excuse to have Panera delivered to school! I haven't used their delivery service yet, so I'm excited. I'm getting this deliciousness delivered! I haven't had this salad yet, either - it's a day of firsts!!
REALLLLLY excited to say "Peace out, Springfield!" for a couple of days! SEVEN hours until we leave...not that anyone is counting down or anything...
I am also feeling SO much relief since I'm finished with comps. I still have to defend my papers in a few weeks, but it's such a nice feeling to be finished with all of that research and writing, and to have my weekends back! I had been working on them since December, so I think I'm still in shock that it's finally over. So. Happy.
I'm already sad about leaving our girls behind, but I know they'll have a blast with their grandparents. They get pretty spoiled when they have these weekend sleepovers, so I think sometimes they wish we were gone more often.
This is one of my favorite snacks. They are super gooey, which is not at all what I was expecting the first time I had them. Now I'm obsessed!

I try not to do a lot of dairy, but yogurt is one of my favorite snacks. I love this stuff! It's super good. Jake likes the vanilla best, but I like the mixed berry. Snuck in some cuddles with Lu during a break from class last night. She was being pretty ornery and wanted me to play fetch with her WHILE I was Skyping into class. Sometimes it's hard to attend class from home! Aspen slept through most of my class. Ruffffff life for these two!
We went to Galloway for dinner since I got out of class late. We split a salad and these wings...balance! I couldn't taste anything, but I KNOW these wings were yummy! They always are. I rocked my new Paradigms and got a lot of compliments - they're so comfy! I haven't gotten to run in them yet, but I'm counting down the days.
Early to bed since I was still feeling crummy, Aspen made sure to give lots of cuddles. <3
Woke up still feeling kinda blah, but I started the morning early to get some more work on comps in...took a break for breakfast - two eggs and Ezekial toast. Yum.
Took a brain break to treat myself to Panera's hazelnut coffee and some Mama Jean's goodies.
Since we will be gone all weekend, I wanted to get breakfast for next week made. That way we won't have to worry about it Sunday night when we get home. On another break, I chopped veggies and threw this breakfast casserole together. Baked it for 40ish minutes on 375. I'll freeze it and then thaw it back out when we get home. Breakfast for next week = donezo!
For my next break I ate lunch. I was craving brussel sprouts and beets, so I chopped some up and threw them in the oven (415 for 25 minutes). Luckily, none of this was super labor intensive, so I could still rest while everything was baking. I had a leftover burger with the veggies and it hit the spot! After lunch, I officially got my comps submitted!!! This sickness kind of came at a good time, I guess. I had a lot of downtime to write and I could do most of the writing in bed or on the couch. Now I'm ready to get better so I can stop feeling like a bum!
Made this apple cider vinegar concoction on the stove to see if it would make me feel any better. I was out of cayenne pepper, so I used chili powder...not sure if that did the trick or not. Jake's parents got us this new wine to try - it's made with peppers! I'm excited to try it out once I can taste things again!

Still sick, blah, so I decided to focus on all the thing that make me smile! Get ready for lots of food and puppy posts! <3
Last night we had tuna with brussles and asparagus. Holy yum. Jake cooked the tuna in chili oil, rice vinegar, and ginger - it was the BOMB. I baked the brussles and asparagus in the oven at 400 for 20 minutes. They had a tablespoon of ghee, garlic powder, chili powder, and cajun seasoning on them. They were super good, too! I think this was another one of my favorite meals, all prepped and prepared in under 30! Win-win.
These two are the best of friends. It make my heart so happy! I'm only mildly concerned that Lu stares out the back window roughly 87% of the day. It looks like her weirdo habits are rubbing off on Aspen. Our poor plant needs a little TLC.
Woke up with zero appetite, so I sipped on coffee and worked on comps for a few hours before I made anything. I usually wake up starving. For breakfast I had two eggs, over easy, blueberries, and Ezekiel toast with almond butter and honey. This is definitely a morning staple!
Aspen and I both LOVE blankets. I think she was mad I stole hers...poor baby girl needs a new collar - cough, cough, Jake! ; )
Brandi and Scottie gave us this lotion. I love the scent! We also have the bath gel, so I feel like we are now complete. I think my Mom and Dad gave us a bottle of this lotion for Christmas, too. As far as I'm concerned, you can NEVER have enough lotion. Ever.
Made the chocolate smoothie from yesterday as a snack this afternoon! I followed the same recipe except I added a stalk of celery and some turmeric, and left out the egg. It was just as good as I remembered/dreamt about all night...
For lunch I heated up some leftovers - the last of our Paleo BBQ chicken and the rest of the brussels and asparagus from last night. I love leftovers because I feel like I have options and don't have to try and throw something together for lunch. We usually make extra of whatever we are cooking for this purpose. It definitely saves time in the long run!
I am SERIOUSLY ADDICTED to candles. It's bad. Yankees are definitely my favorite. We always have one to two candles going at all times. I just got this new scent and it is so fantastic. Very soothing and relaxing! I love when I get the Buy Two Get Two Free coupon...I go crazy!
We picked up some flavored coconut water from Ruby's when we were there. We pretty well just drink water and coffee...not sure if you guys knew I liked coffee. ; ) I really like pineapple, so I'm excited to try this bad boy out later today! I'm saving it as a treat during my class tonight. I have class in Columbia every Wednesday for 3 hours, so I Skype into it whenever I don't drive to campus. It's about a 3 hour drive, so I'm glad my professors let me Skype in for most of the semester. I'm the only student in my program not on campus, so I am pretty thankful that they're flexible with me. I get to wear a headset and everything, so it's pretty hip. Not. BUT this is my LAST class EVER so I'm not complaining...very much. And now I have this pineapple coconut water as a treat to look forward to!
My class is Qualitative Research 2, soooo, it's all about different methodologies qual researchers can use, ethical considerations, data analysis, etc. It's interesting for the most part. Here's my glamorous "sick" office for the day. I'm out of kleenex, so I've resorted to toilet paper. SOS.
I am missing our nephews something fierce. They're in KC having the time of their lives, I'm sure. Our girls are missing them, too!

Definitely still recovering, but I can tell I'm on the mend. Our little one finally decided she cared about me again, so I got some good cuddles in with both girls yesterday! I am also just about finished with comps! So. Close.
Jake's parents gave us an AirFryer for Valentine's Day and we just got around to using it last night. We made sweet potato fries to go with our burgers. They were really good! The AirFryer was super easy to use and to clean - all we did was cut up sweet potatoes, sprinkle some olive oil, Himalayan salt, and black pepper on all of them, then hit start. Really, really easy to use! I did two batches so we could have some for lunches, and I think I liked the second batch better. I like my fries a little burnt on the ends, so I cut the second batch into skinner strips and cooked them 3 minutes longer. They were perfect! Anyone else have any experience using an AirFryer?
Jake grilled burgers out of a combo of ground turkey and ground chicken. The mixture ended up being really soupy, but he performed some magic on the grill and they turned out to be absolutely amazing. He also grilled the leftover zucchini slices - we usually shred some zucchini into our burger meat before we cook it, and that was yummy, too. It was so nice out yesterday, but we both needed to take it easy - Jake is still recovering from his run, so we sat out in the shop with the garage door open and watched a movie while we ate. It was perfect. Very relaxing and cozy.
I had my burger in a lettuce wrap and Jake had a whole wheat sandwich thin. This dinner was incredible! Oh, Jake also brought home some bread and butter pickles. Heck yeah - they're my favorite!
We went on a super short, super slow run this morning. It felt SO good to get my legs moving. I've been going stir crazy. Still not back to normal, but getting closer - day 4 of re:iimmune. I liked our running calendar motivational saying for the day - you don't need to tell me twice! The girls were sticking close this morning (they're not supposed to be on the couch...don't tell Jake!) Lu is TERRIFIED of thunder, so she wouldn't get very far away from me. I loved the extra cuddles. Got a lot of work finished on my comps today! Definitely feeling less stressed about them.
Made the BEST smoothie for breakfast. It tasted JUST like a chocolate milkshake. So. Good. In those containers are chia seeds and flax seeds - I do about a tablespoon of each. Make this smoothie. You'll LOVE it! I also added half of a frozen banana.
Seeeee! See how delicious it looks. I want another one.
Lunch was Paleo BBQ chicken in a wrap with yummy sweet potato fries, carrots, an orange, and bread and butter pickles. Mmmm. Still drinking all of the tea with all of the oregano oil.
So, Jake and I are going to Arkansas this weekend for a much needed getaway! We are pumped. We are going to do some trail running/riding, some eating, some going out, and most importantly - some relaxing. : ) Also, we are staying in a tiny home! How cute is this?? Has anyone ever vacationed in a tiny home? I think it's going to be perfect!
