I have never been very good at yoga. My flexibility is not great & every time I would go, I would get frustrated & just stop going. I'm not very patient...BUT, I have been been going for about a month now, 2 weeks consistently & I'm seeing SMALL improvements! I'm also slightly addicted. I also think it's helping my running - win-win! <3 And yes, we like wine. ; )
Currently obsessed with these two songs. They're the perfect summer tunes.
After I ran & went to yoga, I got groceries, then worked around the house all day. I got Jake's lunches all prepped - Paleo BBQ Chicken (with wraps - not Paleo) and Sriracha Garlic broccoli. Mmmmm.
Jake had a MORC meeting last night, so I made some quick snacks for them, too. These were definitely not Paleo. Buffalo Chicken Dip!
Chocolate chip cookies. (I ate a spoonful of dough....I couldn't help myself! Cookie dough is a weakness.)
I also chopped up lots of veggies - some for the meeting, which they had hummus with, and then the rest for us for the week. It was a productive food day!
Jake got home from work & immediately left to go on a training ride. We have decided to start going for a one to two mile walk every evening with the girls, so I started dinner so we could eat early, walk, & then he could be ready for his meeting. We had spaghetti squash & shrimp topped with a spicy marinara & this tomatillos sauce. It was SUPER good & REALLY easy. I just cooked the spaghetti squash, then sautéed onion & garlic with the shrimp, then threw it all together & let it simmer in the sauce until Jake got home.
Jake had his meeting & I edited a little, then watched some Netflix - it was relaxing! Jake had to be up at 3:45 to meet a group for a long run, but I slept in a little. I had to go Sriracha-less on my eggs because I wanted to run before yoga & I get heartburn if I run after I eat spicy foods. Boo!
As soon as we feed our girls, they pass back out. They have SUPER rough lives.
I'm not a super competitive person when it comes to racing, so I loved this quote. Running is definitely mental for me & I think a big part of that ties into how badly you want something. Races obviously serve as motivation, but for me, my heart has to be in it or I won't follow through with the training needed to get to the race. Anyone else feel that way?
My parents are coming over for dinner tonight. They watched our girls for us while we were out of town last weekend, so we are going to grill for them this evening! I'm going to spend the day working on manuscripts...maybe the sun will come out later!

Friday afternoon I decided to tackle our garage. I took a bunch of donation stuff that had been sitting in a corned since November...whoops.
Then I stopped by Mama Jean's for lunch - smoothie, tuna & kale concoction, chips, and cookie...balance!
Our friends Scottie & Brandi were having an engagement party on Saturday, so I baked cookies and brownies while working in the garage. Multi-tasking at its finest!
DONE!!!! Jake had no idea I was doing all of this, so I wanted to get it all finished before he got home. The bikes will move, too, and I'm having a garage sale with my Momma, so after that, it'll be 100% clean!
Jake got home from work and we decided to walk to dinner at Bambino's, then stop by Creekside for a drink and to see a friend play.
Mmmmmm. I love their salads. We ate ALL the bread. Just carbo-loading for our long runs in the AM! ; )
How do you know you spend a lot of time with someone? This happens.
Saturday morning was an early morning for Jake and a semi-early morning for me. He had a 4 hour run at Busiek and I was joining for the last 2 hours. We stocked up on Gu! Yum.
I got to Busiek about 6:45 to meet the guys. I broke out my tall socks again and I'm SO glad I did. It was suuuuper muddy and we crossed a lot of water.
Before and after. That run hurt a little and I only did half of it...it was SO humid.
At least we had gorgeous views!
Then it was home to shower, change, and grab breakfast!

I forgot to get pictures at the engagement party Saturday - I was having too much fun talking to everyone! But we headed to the lake on Sunday. Jake rode his bike down and my friend Katie and I drove. This view was waiting for us.
Katie hates when I take pictures of her, so I try and take as many as possible. <3
I've been friends with these two since high school. They're the best! We had so much fun soaking up the sun. I'm still sad the weekend is over.
Jake finished his 4 hour ride and got to relax with us for a little bit! He was pretty excited about the seatbelt he made with his foam roller...
Then we all loaded into the car to go to a concert!

On Monday we got up early and grabbed breakfast with Katie on our way home. Mm.
Jake and I spent Monday driving around backroads and stopping at different rivers and creeks. It was SO much fun. He's a very serious driver. ; )
First stop - Lindenlure. It was PACKED. But still so pretty.
Then we went to an old bridge somewhere in Rogersville, I think. Jake finally wore his matching hat! I had to document it.
I loved this old barn. The sky was beautiful, too. It was just a perfect day!
For dinner, we went to Katie T.'s house and BBQ'd! Wade, one of our friends, grilled fish, steak kabobs, and sausage. Everything was phenomenal. While he grilled, we all played yard games. It was the perfect end to a fun weekend.
Our girls were extra sassy last night since we hadn't seen them for part of the weekend. At one point I look over and they're just staring at each other, then the next thing I know, I think they're hugging? They love each other...most of the time...
We were up at 4 to run this morning. It was a little rough after our weekend of not so healthy choices, but we got a tempo run in and both felt MUCh better afterwards.
I went to yoga after our run and now I'm going to spend the rest of the day cleaning, cooking, doing laundry, and editing! I hope everyone has a wonderful Tuesday!
Got a nice 10 mile run in yesterday. It's definitely taking me some time to adjust to the heat when I sleep in...I guess I could just get up earlier. We will see how that goes! I've been enjoying sleeping in past 4:30 am!
Ash and I had plans to meet for lunch at 12:30, but she had something come up and needed to meet at 11:30. She texted me and asked if that would work. I was still about 4 miles out from finishing my run, but I told her as long as she didn't that I'd be gross, I could meet earlier! That's how you know you're good friends. ; ) I rinsed off super quick, then threw a hat on my super sweaty (gross, sorry) hair, and headed to Galloway! Lunch was awesome (I had a Caesar salad with tuna), and I loved catching up with her! She recently hurt her back, so send positive thoughts her way, please! The only downside to lunch - getting Tabasco in my eye. Ugh. That hurt.
After lunch, it was home to edit! I decided to do my editing outside so I could get a little sun. We are going to the lake this weekend and I don't want to fry! Also, I just love summer.

Before I knew it, I had been outside for 2 hours...time to move to some shade! I didn't get too burnt, just one little spot on my leg. It was just such a gorgeous day!
I don't know why this picture is so blurry and I don't want to focus on negative things, but I am super disappointed in some produce I got from Price Cutter this week. I literally had to throw out over half of our brussel sprouts. They were covered in bugs, like, inside the veggies. Sick. I kept peeling layer after layer off and it wasn't getting better. I was not happy.
This is what I managed to salvage out of a huge bag full. Definitely not enough for Jake and I to share.
Luckily, we had some mushrooms in the fridge, so I added those to the tiny amount of brussels we had. Topped it all with garlic, ghee, black pepper, and a little balsamic vinegar. They turned out pretty good! Still bummed about throwing away all that bad stuff, though.

This seemed appropriate. Unfortunately, we didn't have wine last night. Bummer.
We took the girls on a walk last night. These are a few of our attempts at family pictures. I think Jake has some better ones on his phone. Aspen just wanted to give kisses and Lu was probably distracted by a squirrel.

Our walk wore the little one out. We got to sit down and finish a movie we started the other night. It takes us two to three nights to finish a movie...we just can't stay up that late! But I'm okay with it. We watched Furious 7. So good!
We also had a little whiskey to celebrate Jake's new kit! He will be wearing an AWESOME Kuat kit for his mountain bike races in Leadville over the summer. He's SO excited about it!
This morning it was a quick breakfast before yoga! Today is my no run day, so I'm going to work around the house and try to organize some of the stuff I brought home from my classroom/go through a pile of stuff in the garage. I have one more manuscripts that I would like to edit today, so that's on my to-do list, too. Plus some baking for an engagement party on Saturday for Scottie and Brandi!
I think we might go out for dinner tonight, then it'll be an early night. Jake is running trail tomorrow and I might join. He has a 4 hour workout to do, which I am not doing (woof), but I might join for half of it. We are going to the lake this weekend and I can't wait!!! I hope the rain holds off and we get some sunshine, but even if it rains, we will have a good time.

After a quick breakfast, it was time for yoga! I decided to rock some of my favorite neon pants. These are SO great for yoga. They stay put, so you aren't yanking them up all the time. I don't think I could run in them, but they're PERFECT for yoga. Which I why I wear them all the time... Excuse the crazy hair. I hate when my hair touches me when I'm sweating, which is pretty much all you do in hot yoga, unless you're me, then you fall a lot, too. ; )
We have been REALLY bad about taking our recycling consistently. It has been piling up for WEEKS and then we spend an hour at the recycling center. It is my goal this summer to not let that happen. I loaded everything up before yoga, then it took me 10 minutes to drop it all off afterwards. Boom. Much better than an hour!
After I took the recycling, I cleaned out the bins, then set them out to dry...in the rain. Eye-roll. So, they went back into the garage to dry and I got started on some more editing. I was starving, so I had a banana and some almond butter. I could 100% eat that whole tub...this paper took me awhile to edit, so I didn't get nearly as much done on the second one, but that's okay! I'm ahead of schedule, so I'm not worried about it. Yet. I'm the queen of anxiety, so this kind of stuff always stresses me out. I like things to be done way ahead of time, just in case there's an issue.
Then it was time for lunch! My AMAZING neighbor, Ashleigh, told me about these goodies awhile ago and I have been buying them every since. They're so perfect when I'm feeling lazy and don't want to mess with cooking my own beets. If you like beets, try them out!
I threw together a bunch of stuff and called it lunch. Beets, spinach with Jake's Buffalo Ranch chicken on top (thank for sharing!), Nut-Thins, and pickles. It was amazing.
This goof-ball took my phone and took this, so I'm posting it to embarrass him (which doesn't really happen...). BUT he has some AWESOME AWESOME AWESOME news to share with everyone tomorrow!!! He is one of the hardest working men I know and I couldn't be more proud of him.
We went to a BBQ at Alex's house last night. I busted out this shirt from a spring break trip I took with some teacher friends. This brewery is in Austin, TX and it's incredible. I sent this picture to one of my besties, Katie, who would also be at the BBQ. Her response: I'll wear mine! She gets me.

We also finally got to meet this angel!! Lucy, you're the sweetest and I want you to come live with us. Just ask your Mom! ; ) She was all tuckered out from playing with Alex's dog, Charlie.
I had some trouble sleeping last night, so I slept in, which means I'm starting my run later than I wanted, but that's okay. I broke out my FAVORITE pair of Feetures! socks, so that'll help.
Some pre-run fuel - I'm shooting for a longer run. I usually run on an empty stomach, but I woke up hungry, so I thought I'd eat a little something.
I'm meeting Ash, my neighbor, for lunch today and I can't wait to catch up with her! It's been WAY too long. Then it's back home to edit a little more. I'm loving this sunshine!

The route builder is one of my favorite features on Strava! I usually have a route in mind, but if I want to double check the distance, I use this. I love Strava.
I was worn out from hot yoga, but wanted to get a run in. I drank some BCAAs and hit the pavement.
I'm glad I got my run in, but it hurt a little! My legs were dead from yoga and I had basically been sweating all morning, so running at noon was a little tough. But it felt good to run!
It was straight back home to make a smoothie. Can you have too much in a smoothie? Probably, but I don't care! This is my favorite smoothie ever. Yum.
I had forgotten how much I loved Nut-Thins. This flavor is SO good. I had some of those along with my huge smoothie. It was perfect for after a hot run.

There was a squirrel in their yard...they stood like this for a solid 30 minutes. I was a mean Mom and wouldn't let them out to attack.

Late afternoon snack: carrots and humus with Sriracha. Mmmm. And a hard-boiled egg with mustard. I love eggs. So much.
After I got home from my run, I worked on editing manuscripts until Jake got home. I really enjoy doing this, it's just slow going. I have a goal to get two more finished today, then I only have two left before we send them back to the authors to see if they accept our revisions. It has been such a great learning experience.
Lu was staying pretty close to my side yesterday. I think both pups were weirded out that I was home all day. I'm going to just assume that they LOVE it.
Jake got home and went for a run, so I started dinner. I experimented with artichokes. Has anyone else ever cooked these?? I just put lemon, garlic, balsamic vinegar, and black pepper on them. We liked them a lot, but I felt like there wasn't that much meat on the leaves. Maybe because they were smaller? I need to research these a little more. I'd love input from anyone!
i have been using cauliflower crumbles for a long time now to make fried rice, but I just found this and was pumped to try it!! Penny, Jake's Mom, had asked for the cauliflower rice recipe, but I sent her this, too, and they made it last night and LOVED it.
Veggie burger patties, artichokes, cauliflower fried rice - i added quinoa, and cherries. Mmmmm!

One of the views on my run this morning. I love that the sun is coming up earlier now - that's one of my favorite things about running early. I love watching the sun come up, even if it's a little cloudy.
I did a 4 mile tempo, followed by a mile cool-down. I was going to yoga after this and was a little sore from Tuesday's workouts.
Jake had finished his 15 miles (dang) and was waiting for me in the garage when I finished. Crazy hair and sooo sweaty. He looks cute. Typical! ; )
All. The. Eggs. (I made two more after this....) We go through a ton of eggs each week.
We got to eat breakfast together before Jake left for work. I LOVE not having to rush around in the mornings.
I got some major cuddles from our babies this morning. Lu likes to sit right behind me in chairs, she has done this since she was a puppy. It cracks me up!
We are going to a BBQ tonight at our friend Alex's, so I'm looking forward to seeing everyone there! I'm going to spend the day editing manuscripts. : )

Has anyone else tried this stuff? It's SO good. I usually don't stray far from water & coffee, but this might just become a regular drink. It's two servings per bottle, so it lasts me two or three days. The flavor is so unique, but also refreshing. I love it!

I had a phone conference after school was out for the day, so I rushed home, made lunch, & sat outside for a little bit before that. I'm not sure what that rusty pipe is...but this fruit was delicious!
Jake came home with some celebratory flowers for me - aren't they pretty?
Jake mowed the yard & I finished up his lunches for the week: He's having healthy Buffalo Ranch Chicken sandwiches, which I made in the crockpot. He has really amped up his training, so we are adding more carbs into his diet. I think he will like this a lot! I'm not doing much prep for my own lunches. I have been so excited to have smoothies for lunch, so I think that's what I'm going to do this week. I love eating a big breakfast & having a smoothie for lunch. I could never do that at school, so it's definitely happening this summer!
We had both been craving a Dark & Stormy, so we got all the fixins' to make them - they were SO good! Our friends, Plank & Kindal, came over to grill with us, so that was super fun! Kindal is also a teacher, so we were celebrating the beginning of summer, too!

YUMMMM. Jake grilled brats and Cowboy Grillers - which have bacon wrapped around them. If bacon is involved, sign me up! Plank & Kindal brought a salad & veggies. Everything was AMAZING.
I meant to run before yoga this morning, but definitely turned my alarm off - it's okay, though, because it's SUMMER. So I had breakfast & then went to yoga.
I came home after yoga, did some laundry, had a snack & more coffee, & will go run here in a little bit. Almond butter & honey on toast is my favorite. Ever.
After I run, I plan to spend the day working on editing manuscripts. It's going to take some time getting used to not rushing off to work or having homework. I've never NOT had homework. I have always taken summer courses, so this is the first time, in 9 years, that I haven't had a class to take or homework to work on. I kinda LOVE it.

Today is the last day of school...I can't believe it! My room is 99% packed, so I just have a few things to throw into one last box & I am finished. It will definitely be a bittersweet day. I don't think it's really going to sink in until August, though. Enough about that! Here's our weekend wrap-up! Oh, here's my dreary, empty classroom...
After school on Friday, I took my bike out for a little 7 mile ride. I had a blast! I also didn't realize it was about to storm...whoops!
Jake got home & we got ready to go to a graduation party for our friend Katey - she just graduated with her master's!!! We are SO proud. After her party, we were meeting my family for dinner so we could see my grandparents who were visiting from Florida. We decided to try the Harvest Restaurant in Rogersville - wow. If you haven't tried it, check it out!!
We started with a salad and brussel sprouts - they were both amazing.
I got the ravioli dish...it was INCREDIBLE. Obviously. I had to use SERIOUS self-control to not lick my plate...this meal was maybe NOT the best choice for my long run that I had in the morning, but it was worth it! More on the run drama later. Eye-roll.
My Grandma had the rabbit plate & it was awesome. This wine was also phenomenal. I loved everything!
And then the dessert - they brought this tray around as an after dinner treat. Grapefruit chews & a lemon meringue bite. YUM. The atmosphere of Harvest is perfect. We had a blast! The menu changes every week, I believe, so you might not see these same items on the menu when you go.
Then it was up at 3:15 to meet a group for a long run. I needed my BCAAs on this run. I was not feeling a run & once we started, things got even worse. I almost broke off from the group a few times, had a mild panic attack because I couldn't catch my breath, & had some stomach issues due to the rich food, which I'm just not used to eating. Jake was really good about helping me through certain low points of the run & knowing when I just needed to be on my own to get my mind right. Overall, the run was not a good one, but I got it in & that's what matters.
It rained on us the WHOLE time. I put my hair into a braid, thinking that would help keep it from getting tangled. I was wrong. Very, very wrong. This took me forever to untangle...
I got 15 miles in, which is the longest I have done in about 3 years. Like I said, I REALLY struggled with this run, but I was thankful for the group that kept me going.
Jake needed 23 miles, so he was going to run home to get his miles in. I drove straight home & made a recovery shake with this goodness.
Jake got home & hopped in the shower because we were meeting my family for breakfast. I made the mistake of laying down on the bed to cuddle with Aspen. It was REALLY hard to get back up. We were both banking on taking a nap later in the day.
We went to Vespa Kitchen again! Mmm. Jake tried the burrito this time. I think his favorite was still the rancheros that he had last weekend. I got the Eggs Benedict again. YUM.
After breakfast, we went to my parents' to help them hang some paintings my Grandpa had done for them. This was quite the process & I was thankful that Jake, my Dad, & my Grandpa were the ones doing all the hard work!
Lu got to come with us & she was in heaven hanging out with the guys. If Jake or my Dad would go out into the garage, Lu would sit by the door and cry. She just loves them.
How amazing are these? My Grandpa is SO talented. He just started painting about 10 years ago. They look PERFECT!
Lu found my sister's dog's bone & hid it all over the house - usually behind pillows on beds. My grandparents found it under their pillows Saturday night when they went to bed. She's a mess.
After we (Jake) helped hang the pictures, we sat around chatting for awhile. Before we knew it, it was after noon & we decided we probably wouldn't get a nap in. Some of our friends were going to Mother's, so we decided to meet Jake's Mom & some friends at Coyote's for wings - I was CRAVING them, then go to Mother's to meet up with everyone else. I was so thankful the rain stopped!! These pretty girls are some of the best friends anyone could ever ask for!

After Mother's, we went to The Pitch for pizza with everyone. Jake & I shared the Taco Pizza. It was SO good. Then it was home to bed! We had been up since 3:15, so we were pretty worn out.
We slept in a little, then had a quick breakfast. Burritos & fruit!
After we ate, Jake left to go on a 35 mile ride.
And I went to the grocery store. This happened. The big bottles were GONE. I was so sad.
Then I got a short run in & finished just as Jake was finishing. We changed, then hopped on bikes again to meet our friends Kallie & Jeremy at Brew Co. I think we ended up getting about 16 miles in after riding to & from Brew Co., so Jake got 50 in for the day, which is exactly what he needed.
After Brew Co., we stopped by Jake's Dad's house to chat, then Jake ran out to my parents' house (he needed 7 miles) & I drove so we could say goodbye to my grandparents. Yes, he is crazy. But I am SO proud of him & his dedication is so inspiring.
Side bar: Since today is my last day of school, I got to change my alarms! I like these new times quite a bit better! ; ) I will still run with Jake in the mornings, so these times will change after this week because he has to be at work earlier, but for now, I'm going to enjoy sleeping in a little.
As we were driving home from my parents', we decided we needed Chinese. We hadn't had any in forever & we were both craving it. It was SO good. We had kind of a cheat weekend, so it's back on track today.
The girls were SO ready for bed.
Jake had some orders to put in for his ambassadorship & I had some emails to respond to, so we got to work on that after dinner.
We both slept in this morning - it's our rest day & I think it is MUCH needed. I might go to yoga after school, but I'm not going to run or ride today. We had egg scrambles with mushrooms & spinach, Ezekiel bread with honey, & some fruit. Then I headed out the door for my LAST DAY OF TEACHING.
One year ago today, I had just finished a half in Chicago. I'm so glad Jake went on this trip with me - we had a blast!

Just editing some manuscripts & eating carrots. I have an editorial assistantship over the summer for a literacy research magazine. I have never done any work like this before, but I'm really enjoying it! I think it will be so beneficial, especially as I continue to conduct my own research & publish it. It's nice to have experience with all sides of the process.
Lunch was a salmon/tilapia wrap again. These turned out super yummy! I also made a little plain Greek yogurt & ranch mixture to spread on the wraps. Mmm. I just love food.
I had planned on going to yoga after school, but had kind of a crummy day & just wanted to spend some time outside. So, one of my besties, Katie, & I met at Galloway. I rode an old bike that Jake got to plant in our front yard, haha! It's fun to ride & it has a basket - what more could a girl ask for?!

Jake & I had lots of leftovers that we were trying to finish up...we ended up with quite the spread! We finished the rest of the french dip sliders - they were definitely a hit. We will make them again! We also finished up my leftovers from when we ate at Cesar's on Wednesday. Mmm. Then it was early to bed!
My girlfriend, Kayla, & I went to yoga SCULPT this morning. I'm so glad she joined me! Thanks, lady! It kicked my butt, that's for sure. I might run a couple easy miles after school, I haven't decided yet. My knee is feeling better!
My grandparents from Florida are in town - they're my Dad's parents. I am SO excited to see them later this evening. This picture is me & my sister with my Dad's parents & my Mom's Mom. We have some of the best grandparents in the world! I think we are going to Black Sheep for dinner. Mmmm Salt & Vinegar fries! <3 BUT before we meet them for dinner, we are going to a graduation party for one of our super good friends, Katey. She just graduated with her masters & we couldn't be more proud of her! She absolutely kicked butt & we can't wait to celebrate with her!!!
I thought this was appropriate to share as today is my LAST full day of teaching. This picture is from 5 years ago, when I met my very first class EVER. My first teaching job was in Hollister & I taught 5th grade. It's hard to believe this was 5 years ago...since then, I have taught 7th grade ELA, & been a reading specialist for 6th, 7th, & 8th grades. It's definitely bittersweet knowing this is my last full day with kiddos, but I'm excited to see what the future holds.
After dinner tonight, it's home & early to bed, like always. ; ) We both have long runs (26ish for Jake & 12-14 for me) starting at 4 am. I saw this graphic on Instagram & thought it applied perfectly. After we run, we are taking my grandparents out for breakfast! I'm excited & that's definitely motivation to get a good, long run in. I predict a nap sometime Saturday afternoon! We don't have any major plans for the weekend, which we are both excited about. We have had some crazy busy weeks & are ready for some much needed down time.

Snacks yesterday morning! These cupcakes were in the work room...I caved & grabbed one. I didn't realize how many laughs this tiny treat would give me throughout the day. And yes, it was delicious!
I got this email from one of our sweet counselors at school. She knows I usually try to steer clear of the treats...obviously I failed yesterday. ; ) She's a smarty lady! It is definitely the end of the school year. 1 more full day...we can do this!
Then I got this text from one of my girlfriends, Sam, who is also a teacher. She always cracks me up. Also, where is she getting the M&Ms? I need some...ASAP.
I DID manage to stick to my healthy lunch - salmon/tilapia wrap & asparagus. It was REALLY good! I forgot to take a picture before I started chowing down...I was starving!
I worked on editing manuscripts for a literacy magazine all afternoon - I'm almost halfway finished! Then it was home to change for yoga. I haven't worn these Altra neon pink pants yet, so I decided to try them out. They're pretty comfortable! They are a thinner material than I'm used to, but I thought they'd be perfect for hot yoga. I really liked them! They stayed in place throughout the whole class.
I was starving before yoga, soooo I decided I needed some pita chips & Sriracha. This is why we can't keep snack food around! Yum.
Then it was off to yoga in all my neon & Jake's truck! I kept her safe ALL day. I promise!
After yoga, we were going to ride bikes to dinner, but we were both tired & it was SO windy, so we decided to just drive to Cesar's. We both ventured out & tried something new! We usually get tacos - they're amazing, but Jake ended up getting a steak dish. It was delicious!
And I got the Shrimp Diablo. WOWZER. It was SO good. I'm definitely going to get this again. And again.
I spy someone chowing down on some leftover banana cake from St. Michael's...it's just SO good. He let me have TWO whole bites! Eye-roll.
I am going to yoga after school - no run for me today. I have a tight tendon behind my knee that's been bothering me, so I'm going to take a day or two off. Smoothie for breakfast!
Since I teach 6th, 7th, & 8th grade, my schedule at the end of the year is always chaotic because each grade level does different things during the day. I decided we would just watch movies today & tomorrow since I don't know when I'll have kids. We are watching The Little Rascals this morning, per requests from my first hour students. They're cracking up! It's so funny. My room looks so dreary with everything taken down & packed up.
Jake & I might go to the Springfield Cards game tonight with his parents. He has a training ride after work, so I think he will see how that goes. I'm definitely loving the sunshine today!!

I had leftover chicken, quinoa, & black beans for lunch yesterday. All mixed together with Sriracha & salsa, of course!
I submitted ALL final grades for the college courses I taught this spring. YAY! One of the professors I teach with sent me a Starbucks gift card. How sweet was that?! I guess my coffee addiction is well known...
After school, I went to the grocery store to get food for some meal prep for this week - I had put off our meal prep on Sunday since we had everyone over for Mother's Day. We have been having a lot of chicken & I was craving fish, so I got salmon & tilapia for the rest of the week. I topped the fish filets with honey, Sriracha, garlic, & black pepper. I will put them into wraps for lunches or eat the fish on top of spinach. It's nice to have options! I also sautéed some asparagus for us to have as a side.
While the fish was baking, I started on dinner. Jake was out on a training ride, so I told him I would have dinner ready when he got home since I knew he'd be starving. He LOVES french dip sandwiches & had been talking about having one for the past week, so I thought I'd surprise him & make us some. This was totally NOT healthy, but they were delicious! I also made sweet potato fries to go with our sandwiches. We both were planning on longer runs in the AM, so a little carbo loading was needed!
I LOVE our AirFryer - Jeff & Penny got this for us & we use it a lot! I need to venture out & use it for things other than sweet potato fries.
I had planned to get some weights in after school, but I got caught up with cooking. Sometimes you need to bring some light weights into the kitchen & workout while you cook. Multi-tasking at its finest! ; )

I've never been a huge french dip fan, but I really liked these! My Mom LOVES french dips & Jake said his Mom does, too, so we will have to have our families over the next time we make these. Still eating some leftovers from our BBQ...I think I'm done with the pasta salad. I can't eat it anymore!
Funny story: After dinner, we cleaned up & put things away, then sat down to relax - this was about 7:45. The next thing I know, we are waking up and it's 11 pm!! I guess we were both exhausted. Jake was planning on doing a long run this morning, so he set an alarm for 3:50 & went right back to sleep. I didn't need to run as long as he was planning, so I slept in until 4:20. We both woke up feeling pretty refreshed, so I think we needed an early bed time.
This was our running calendar page for the day...I thought it was SUPER appropriate because in EXACTLY a month, we will be in Colorado running in the mountains!!
Jake got 13 miles in this morning & I got 8.5. I've had a tight tendon behind my knee all week, so I'm taking it easy. I'm planning on going to yoga after school, then Jake and I are riding bikes to dinner. We might need another early bed time tonight!
After my run, the girls were STARVING (eye-roll). They weren't happy about having to pose for this picture. They were pretty stoked, though, about seeing their Dad finish his run - they both took off sprinting toward him & helped him finish his run.
I made us breakfast super fast - 3 minutes! That's a new record. Jake had to leave early to ride his bike to work. Eggs & smoothies again!
I got this email from Strava today...I mean, if they say I NEED new shoes, I guess I do! ; )
Jake is seriously the best. Ever. My car needed an oil change, & he offered to take it & drop if off for me since I was planning on going to yoga after school. After he dropped my car off, he rode his bike to work & it had just started pouring. Poor guy. And on top of all that, he let me drive his truck! If that's not true love, I don't know what is! ; ) Thank you, Jake! You're the sweetest.
We have a dinner date tonight to chow down on some Mexican! <3 I can't wait. We will ride bikes to dinner if it's not raining. After running this morning, yoga after school (me), Jake riding to & from work, & riding bikes to dinner, I think we will both be worn out! Maybe a 7:30 bed time? HA!
2.5 days left of school!!!!! I'm so excited. Some of my friends are already out & I'm SO jealous.
