A smoothie for lunch Friday was JUST what I needed. I used all this goodness - I added cold brew for the first time and LOVED it!
Also added some spinach, blueberries, and half a zucchini. Mmm. I love having smoothies for lunch because I can sip on them while I type. Win-win!
I went in to get something from the bedroom and Aspen was sprawled out on the bed. She's such a sweet girl. I think she was wanting me to leave alone though because she went right back to sleep as soon as I left.
I took a typing break and had another lunch, ha! I feel like I eat every 3 hours...I'm just always hungry. This wrap was amazing!
Jake and I love Pappo's, and they just opened another one, so we went to try it out! Flights are my favorite thing ever. I don't drink a ton of beer because it makes me SO full, but flights are always the perfect amount and I get to try a variety. I always get them if they're available!
Our dinner was awesome! We got two small pizzas and a salad. One pizza had BBQ pulled pork and the other was a Greek pizza. Both were incredible.
Then we went to Cherry Picker to meet some friends for a drink before we went home. It was starting to cool down, so the weather was beautiful!
Jake always does this when I ask him to take a picture. I need to save them all and make a collage or something... ; )
This is my friend Sam! She and I bartended together WAY back in the day. We have been friends ever since! She's super awesome and maybe the funniest person I've ever met.
Then it was up early for long runs - 10 for me and 25 for Jake. I mixed up some re:play, which is one of my favorite things to drink during a run, and had a little breakfast, then was on my way! I don't normally drink anything if my run is 12 or under, but I knew it was going to be hot, so I wanted to take something with me.
Rockin' my Nathan pack and my favorite Altra hat! I got started a little later than I wanted, so knew it was going to be warm when I finished. I hate running in heat. I got a pretty hilly 10 miles in at about an 8:30 average, so I was happy with the overall run! The last mile was pretty miserable because it was all up hill, but that's my own fault. Then I got to chat with my friend/neighbor, Ashleigh, for a long time when I finished. It was SO good to catch up with her. Jake got home about an hour after I did and we headed to brunch because we were STARVING.
Walked into the house after my run to these two spoiled girls and their toy.
YES. I got my all-time favorite thing from Aviary, the Humble Brag. So so so good. A crescent, cheese, ham, sausage, bacon, and egg. YES.
Anyone else recline their seats in their own driveway and just chill in the car?? We were both pretty sleepy. I think Jake could've fallen asleep right then!
Jake dropped me off and went to run some errands and I got started on some dissertation stuff. First, I made a huge cold brew. Also, I really love this tank top!
Aspen was pouting because I wouldn't let her on the couch. She stood like this, with her head on my legs for a LONG time...
Jake came home from running errands, watched an episode of New Girl with me for a break, and then fell asleep. He had a huge training week, so I know he was exhausted. I let him sleep until we needed to leave to meet friends for dinner. I don't know how he fell asleep like this...
I got a lot of sun on my run! My shoulders and chest were a little burnt.
We met these two at CB Social House. We got to see them TWICE in one week - I was SO happy!
Jake and I shared a salad, a burger, and brussel sprouts. Oh, and some friend chicken skins as an appetizer...so good!
This burger was AWESOME. The bun was so delicious. And any time I have brussles, I'm going to be happy.
I LOVE this song. If you haven't heard it, check it out! Thomas Rhett is such an impressive artist.
Then it was up Sunday to run together! I needed 6 and Jake needed 10-15, so we got to run together! We did a 6 mile loop, then I went back to the house and he finished up his own run. I came home to stretch and feed the girls They were pretty excited about getting their breakfast in the front yard.
Lu was giving lots of puppy kisses.
Then Ash brought up some fresh juice that she has just made! Holy yum - it was AWESOME. She's the best.
I was finishing up our breakfast right as Jake got home from his run. We ate our egg and veggie scrambles out in the sunshine!
We came inside to this - I guess eating breakfast in the front yard really wore her out.
After breakfast we both took a short nap, then made cold brews and hit the road to knock out some errands!
We finished all our errands and were still smiling. That's a good sign! We leave Friday for Colorado for almost 3 weeks and I HAVE to finish my dissertation before then and Jake has two HUGE races out there, so we are both a little stressed about everything we need to get done. BUT it will get done and everything will be great! : )
I have always gotten nose bleeds, ever since I was in kindergarten. Sometimes I don't have one for a long time and sometimes they happen all the time. This week has been one where they're happening a lot. I don't know why! I kept hoping I'd grow out of it. I'm so used to them now, I just stick toilet paper up my nose and go about my business. Really glamorous!
We have this book in our bathroom. I always forget about it, but I love flipping through it and seeing who has written in it! It's the best. It always cracks me up!
Our friend Dan was coming over to grill, so we had some snacks and a beer while we waited for him. Crackers, cheese, and hot sauce is a staple in our house. Also, we are out of Sriracha. SEND HELP.
This tank explains kind of the only reason I run...just not for a TON of beer. Only one or two. ; )
Mmmm! Our dinner spread last night. We grilled kabobs with shrimp, chicken, onion, green pepper, mushrooms, and pineapple. Then had some yummy sides!
Jake and Dan have been friends forever. So glad we got to see him last night! Dan's wife was out of town, so we were bummed she couldn't make it - next time!!
Aspen found a tennis ball. She's been keeping it pretty close to her ever since. I think they were wrestling in here and then fell asleep. That's pretty much their nightly routine. Eye-roll.
Aspen is pretty happy with her tennis ball this morning!
This week is crunch time for both of us. I HAVE to finish my third chapter and then start editing and revising. Jake already started packing, so that's good! I haven't done anything for our trip yet. My dissertation will be my focus until Wednesday or Thursday. Hopefully I can finish it Wednesday...fingers crossed! We don't have too many plans this week, which is good! We are getting together with my birth-mom, Dawn, and her boyfriend, Mitch, for dinner, so we are both really looking forward to that! We LOVE spending time with them. Then the rest of the day/evening will be spent getting ready to leave on Friday and writing my dissertation.
I hope everyone has a FANTASTIC Monday!!
So, one bad (not really!) thing about having a blog, people know what you're doing and call you out on it! Jake read my blog before my run yesterday and as my running coach, he strongly suggested I go ahead and do the hill workout on the treadmill. Ugh. I 100% did NOT want to do that. But, he gave me a workout he had done and said to try it. Just keep all this in mind and I'll explain more once I get to my actual run...
I had a biscuit with honey and some coffee before my run. Then I decided I needed another biscuit, this time with jelly. They were both delicious!
I texted Jake as I got to the Y and asked if this run would deserve wine - in my opinion, every run does, but that's a topic for another day. He assured me that it did, as did my headband, so knowing I would be rewarded after, I headed into the Y ready to go!
Oh. My. Gosh. This run did NOT go as planned. Also, Jake and I had a major miscommunication about the workout. I started out with 3 warm-up miles, which felt great! Then the plan was to run 3 rounds of 'hills', so I was shooting for an 8-10% incline for 5 minutes. Well, that sounded really hard, but I thought I'd give it a shot. Also, I need to mention, that when I run hills, I try to go fast. Mostly because I just want them to be over with. Wellllllll, Jake didn't mention that portions of this workout can be walked, if needed, so I tried to amp up my speed, along with the incline. I just couldn't sustain that. I made it 4 minutes into the first round and had to drop back down to a flat, slower pace. I did my 3 minute recovery, then started again. Well, I only made it 3 minutes this time and the incline was 7%. Ugh. I was frustrated. I decided to just do 3 minutes at a fast pace at anywhere between 6 and 8% incline. That ended up working and was more sustainable for me, so I did a total of 4 of those. I did a short cool-down and got the heck off the treadmill. I ended up with a total of 6 miles.
I texted Jake right away and asked if he had been trying to kill me. This is when he tells me that the pace should've been slower and I could've walked if I needed to. All the eye-rolls. Next time, we will make sure to talk about the WHOLE workout!
I immediately grabbed a smoothie from Mama Jean's and a Bota Box! The RedVolution is our favorite. It's SO good!
I also had some chicken tenders with mustard and Sriracha.
Then I spent more time working on Chapter 3 - I have each day planned out, so hopefully I'm finished with it by Tuesday of next week. Fingers crossed. I'm already a little behind, so I have lots to do today!
A couple people have asked about lunches, so I thought I'd share what I usually send with Jake. I just end up packing his lunch when I start dinner, so it's easy. If I don't have time, he packs it and usually goes with the same types of things. This week he had chicken and veggies, Wheat Thins, yogurt, carrots and almond butter, an apple, an orange, a hard-boiled egg, a fig bar, and a La Croix. I can't drink La Croix (sad day) because of the carbonation, but Jake loves them!
I saw this on Instagram yesterday and LOVED it. Especially after my treadmill run...
Dinner last night was spaghetti squash pasta with shrimp, scallops, and ranch, rolls, and salad. Mmmm. We use the Walden Farms Ranch - it's the best!
Aaaaaand I got my wine!
The girls relaxed in their chairs after they ate. They have pretty tough lives!
We got to relax for a little bit after dinner and watch some New Girl. I'm SO glad Jake loves this show. It's one of my favorites!
I didn't know what sounded good for breakfast this morning, but I was craving something different. Then I remembered we had Whysk protein mix! You can make pancakes, muffins, and bread with this stuff. I've only tried the pancakes, but they're yummy!
I added cinnamon, nutmeg, and some PB powder to the mix.
Ta-da! Happy Friday to meeee.
We have a meeting tonight for a board that Jake is on, but I think that's it as far as set plans (YAY!). Jake has a long run tomorrow, 25 miles I think, and I will do 8-10. Then I'm going to work on Chapter 3 some more. I usually try not to work much on the weekends, but we leave next Friday for Colorado for almost 3 weeks, so I want to be able to enjoy that! We have some stuff we need to do around the house, too, so hopefully that will all get knocked out this weekend.
I hope everyone has a wonderful Friday and a relaxing weekend!!
The first thing I want to say is....I FINISHED CHAPTER 2!!! Wahooooooooo! I worked all day on it, so it feels good to be able to say that!
Some background: My dissertation is studying literacy practices and community formation in an online college class. I picked this topic because I think that's just where education is going - soon we will see even more online courses, and since I want to teach college full-time, I want to know how to design courses in which students feel connected and are supported. So, I LOVE this topic and am very passionate about it, it's just a lot of writing. But I knew that when I signed up, so I'm not complaining! : )
When I took my first break after finishing a section of chapter 2, I did this arm workout. Holy heck. It burned. And I am SORE this morning. Try it out! You can thank me (or hate me) later. Then I had a small protein shake with PB powder, collagen, super greens, and some protein. Then it was back to writing!
This is why Lu stares out the back doors all the time - she has a lizard friend living under the step out to our backyard. See him? He's cute! She loves him.
Before I knew it, it was lunch time! I just threw a bunch of stuff into a bowl, topped it with Sriracha, and chowed down. This is one of my favorite ways to eat, so I was happy! Leftover fish from our tacos, sweet potato and mushroom scramble, coleslaw with the amazing dressing below, and some guac! Mmmm. It hit the spot!
This stuff is GOOD! I usually make my own dressing by just throwing random stuff together, but I really liked this!
Virtual lunch date with Jake! I think most of our texts contain food pictures...that's okay, right? HA!
I'm really into watching my heart rate, not that I do much with it, it just intrigues me. I think the lowest my resting heart rate has ever been was 44, so it's getting close to that! I also think that sitting in front of my computer allllll day had something to do with this...
When Jake got home, we headed over to my parents' to celebrate Ralph's (my sister's pup) birthday and to go out to eat. We had a celebratory glass of wine over me FINALLY being finished with Chapter 2.
The birthday boy! He's such a sweet dog and LOVES Piper so much. It's adorable.
Jake's Momma, Penny, got me this shirt for Christmas. I wear it WAY too often. It just applies to most days! Thank you, Penny! <3
These chips. All the heart eyes. We went to Iguana Roja and they put the BEST seasoning on their chips. Whenever I find one that is covered, I savor it. I also dig through the basket of chips to find the covered ones. I can't figure out why people won't go back to this restaurant with me...
Jake and I shared the fajitas. I was only able to have one really small one because I was full of chips...
For someone who takes a lot of selfies, I really dropped the ball on this family picture. At least everyone else looks good! Really good, actually. Do I ruin pictures? Probably.
Then we took our very full bellies home and crawled into bed. I can never sleep when I overeat, so I was wide awake. One day I will learn my lesson...maybe.
This is my favorite night shirt. My Momma got it for me when we were on vacation somewhere...I can't remember where it was, but I've loved it ever since! Otters are one of my favorite animals. <3 It says, "I otter be in bed." Jake laughs at me every time I wear it.
Well, I didn't sleep well, so I didn't get up until almost 7, which I hate. But oh well! I needed the sleep. I'm going to go to the Y in a little bit and do my long run for the week. This is one of my shorter weeks, so my longest is 8, which is doable on the treadmill. I had a hill workout to do today, but I'm going to move that to Saturday, which was supposed to be my long run. I don't really feel like running in the rain OR doing hills on the treadmill...I'm wearing my favorite Feetures! socks, though! They were having a sale yesterday, so I stocked up. They already shipped! I LOVE that.
My failed attempt at getting a picture to send to Jake...
Baby Lulu! This popped up today. She was so cute and sassy as a puppy! Well, I guess she still is...
The only thing on my to-do list from yesterday that I didn't get accomplished was my core workout, sooooo I'll do this today after my run.
I'm going to have a snack, go run, then come home and work on Chapter 3! I'm kind of enjoying the rain...it's relaxing.
Happy Friday Eve, everyone!!
Guys, why even make a small bottle of Sriracha? That seems silly...
Lunch yesterday was the bomb! A sweet potato topped with chicken, guacamole, onion, BBQ sauce, and Sriracha. Yes, please! And some plantain chips on the side for good measure. ; )
This little girl got her hair cut yesterday. Getting her hair cut always wears her out! She slept most of the day. Look how sweet and innocent she looks? Especially for someone who isn't supposed to be on that chair...
Aspen in her spot by the door! If there is sun shining anywhere in our house, Aspen will find it!
I decided I needed a power nap, so all of us gals ventured to the bed to cuddle. <3 I texted Jake as I was laying down and told him to make sure I got up when he got home - that way I was only asleep for about 20 minutes. I'm not the most pleasant person to wake up, so I wasn't sure if he would even attempt. He did! And I was nice...I think. I don't remember. ; )
Jake had a ride last night, so i worked a little on my dissertation and then started on dinner. We had fish tacos and my favorite brussels! This was seriously yummy. The brussels just have garlic powder, balsamic vinegar, and honey on them - this is my go-to for brussels. It's SO good. For the fish, all I did was chop up 4 tilapia filets and add the chunks to some sauteeing onion and jalapeno. Then I cooked everything with lemon and lime juice, and some seafood seasoning from Primal Palate. That's it! Super simple and really good! We topped the tacos with guac, Sriracha, salsa, and coleslaw.
POPSICLES. Can't stop, won't stop. Jake had two!
They were thinking, "Maybe if we don't look at her, she will throw our toy..."
Jake needed to be up at 3 to run with a group at 3:30 - I decided I would get up with him, run a little with him before he met them, then come home and work on my dissertation. Ugh. I knew that alarm was going to hurt when i heard it going off. We were also in bed before 8...
We both got up just fine! I ran 3 with Jake, then he met a group for a long run and I ran back home. I got a total of 5 in. Nothin' like crossing a busy street and not seeing a single car...
I was absolutely drenched. Here's my failed attempt at showing the sweat droplets dripping down my legs. It was SO humid. I can't imagine running in this any later than we did!
I LOVE my headlamp. It was definitely needed for this run, too.
I got home from my run and got right to work typing. I got about 2 hours of work in before Jake got home from his run. While he got ready for work, I made us breakfast. I love burritos, but I like to rip my tortilla into little pieces and pile everything on that way - then it's like 12 little burritos, instead. Is that weird? Probably. Jake ate his like a normal person. These had egg, sausage, chicken, mushrooms, onion, and spinach! Topped with guac and Sriracha, and cheese for Jake. Mmm!
I WILL finish Chapter 2 today. Or else. Here's my plan - it's happening. I don't have an option! I have 3ish sections left...I think I can, I think I can...
It's another dissertation work day. We are going to dinner with my parents tonight. We leave next week for Colorado for almost 3 weeks, so we won't see them for awhile! I think we are getting Mexican. <3
Cheers to Wednesday!
We had leftovers from brunch at Brew Co from my high school reunion last weekend...looks like Jake and I will be eating this for awhile! HA! Good thing it's pretty tasty!
Brew Co. breakfast at home? Yes please! <3 Seriously, I don't know what they put in their gravy, but it's AMAZING. I don't even like gravy...
These two, always fighting over their toy. They only LOOK innocent...
I forgot to post this picture of Jake's lunches for the week - chicken and veggies. Aaaaand Sriracha, of course.
I did this leg workout in the garage yesterday as one of my breaks from writing. Those dang knee ups HURT.
Wall sits hurt, too! It was so humid in the garage...I probably should have done this workout in the driveway...
I had a huuuuge smoothie for lunch - spinach, blueberries, half a banana, zucchini, protein powder, MCT oil, nutmeg, and collagen. It hit the spot after being so hot out in the garage!
Then I spent a couple more hours writing. When Jake got home, we did some abs together. That obviously hurt.
I was hungry (story of my life), so I ate my LAST fig bar. I've gotta go get more ASAP.
We had a meeting for Single Track Mind - an awesome festival with music, mountain biking, trail running, and all the best things (check it out on Facebook!)! So we grabbed dinner out at Koriya before we headed to the meeting. We shared these bowls and they were AWESOME.
After the meeting, it was home to work on some school stuff - next Tuesday is the last class meeting for the summer course I've been teaching. This is the first slide. I think my students will like it...I think they're sick of me taking over their summer. ; )
No idea what they're staring at, but they do this A LOT. Lulu does it more than Aspen. There are always nose prints on those doors.
I had a track workout in the AM, so I mixed some Skratch to take with me to the track. I opted for Orange. Mmm.
This was my plan for my workout - I wanted to end up with 7 miles total, so I added a 2 mile warm-up and a 2 mile cool-down. I had some time goals I was shooting for, but they were total guesses. I used the Yasso 800 theory for the track work - but I was guessing because I haven't ran a full marathon yet. Basically the Yasso 800s theory says that if you can run a 4 hour marathon, you can run an 800 in 4 minutes pretty easily; if you can run a 3 hour and 20 minute marathon, you can run a 3:20 800 and so on. I know I want to run a 4 hour marathon or under, so I was shooting for 4 minute (or under) Yassos. I ended up getting 3:31 twice, then 3:27, and ending with 3:22. They say the 800s aren't indicative of what you can run a marathon in, that it's the other way around, but this at least gave me a starting point for track work!
I hadn't done any track work in awhile, so I was really looking forward to this workout! I was the only one on the track for awhile, so that was nice. And it was so dark outside, which is always fun.
I survived!! That Skratch saved me. I LOVED this workout. I think I could've pushed a little harder, but it was a good one for my first time back on the track in a LONG time. Plus, we always say we could've pushed harder AFTER we finish, right?
Here's what I ended up with - my warm-up was a little slower than I wanted, but it felt good, so I stayed with that pace. My legs were definitely a little sore from my leg workout on Monday, so it felt good to shake them out.
I met Jake as he as finishing his run, so we ran a little together so he could meet his mileage. Then we chowed down on leftover brunch from Brew Co.! I made eggs for us this morning because we wanted them over easy.
I just love Elle King. So much. Do you ever forget about a song and then it comes on and you're SO excited?! That happens to me ALLLL the time, and it happened this morning with this song.
I dropped Lu off to get her hair cut on my way to teach this morning. I HATE dropping her off anywhere, even though I know she will be just fine. It always make me sad. And I know Aspen is at home missing her.
I am teaching this morning, then running some errands, THEN home to....WRITE! Eye-roll. I'm SO close to finishing my second chapter. SO. DANG. CLOSE. I'm so close, that it's hard to write. Anyone else know what I mean? I think my brain might just be fried. I was trying to explain something to Jake last night and it was just awful, he laughed at me the whole time. But I just couldn't use words.
Mmm. I just love this chocolate. It's so, so good! I think the blueberry is my absolute favorite, but I would eat any of these chocolate bars if I HAD to. ; )
The precious girl will always lay down on any articles of clothing that we leave on the bed. I think it's because she loves us sooo much.
My external hard drive is my best friend. I got this baby 5 years ago to back up my old computer before I got my Mac. I just recently cleared everything off of it and started fresh with my PhD program. I'm always so nervous about having my computer crash and losing everything...
Is this not how you do it??? HA! This made me laugh REALLY hard. I can totally relate right now.
Quinoa bowl again for the win!
Sometimes you just need to break out your sorority senior pub crawl shirt. I didn't go to the pub crawl because I had transferred to Drury, but I still love this shirt!
WELP, this happened. Guys, it's real. I'm already nervous. I don't know why marathons scare me so much, but they really do! I have done probably 16 or 17 halves, but a marathon is just A LOT. I'm excited, though!
Jake got home from work and we ran a couple of errands, then went to dinner!
I got him this shirt last week - it just describes him PERFECTLY.
I have been craving bruschetta from Arris. That's all I wanted for dinner! I had a half in the morning, so I figured it was okay. We ate this entire thing...
Jake also wanted pizza, so we got this - I was full after the bruschetta, so I had a corner piece of the pizza and called it quits.
Cheers! We both had early mornings, so we ate early and then headed home to get ready for our Saturday morning activities.
After dinner, Jake worked on his bike a little and I foam rolled. Wine is a necessity when foam rolling. Not really - don't do that. Water is a much better choice!
I had a half marathon training run Saturday morning and Jake had an 80-some mile bike ride in Arkansas. I love any excuse to get to use my pack! I also took some Skratch and a Gu packet.
Pictures at 4:30 am! Always a good idea.
Ezekiel bread with almond butter and honey in the car.
All ready to go! Favorite pack and favorite hat. <3
This is the loop we did - I loved it! I didn't have the best feeling run, but the loop was pretty flat and we got to run by some really pretty areas.
Like I said, this run did not feel good. At all. I felt okay until mile 6, but then after that, it got harder and harder to finish. The last 7 miles sucked. BAD. The last mile I started cramping, but it was the worst cramping I've ever had. I finished the run clutching my side, which was rock hard from cramping so bad. Ugh. It really, really sucked. But, they had chocolate milk at the finish, soooo that helped.
This was fun to rip out of my braid. I'm not sure how my headphones got tangled, but they did. Eye-roll.
I was meeting my parents for breakfast after the run, so I drove straight to their house. My Mom was rocking her new shirt for Jake's races. When I asked to take a picture of her she asked, "Is this how the young girls are posing now?" Hahahah! She cracks me up. Isn't she cute??
My Dad made this putter from SCRATCH. He's seriously so talented. He's always impressing me with the new things he's doing.
Breakfast! And they had Sriracha. <3 We ate at Market House Cafe and Bake Shop in Ozark. If you haven't been there, seriously go try it out. It's INCREDIBLE. The owner is the sweetest lady and she hires some of the best, most helpful staff. And the food is outstanding!
These two were jamming out to a song about a skunk - it was hilarious.
Then it was home to relax for a little bit before my reunion. I iced and watched a little Shameless. I tried to take a nap, but I couldn't, so I settled for Netflix and puppy cuddles.
My high school, Springfield Catholic, had done a ton of remodeling since we graduated, so a small group of us went through the school and toured it before our reunion started. HOLY COW. It looks amazing. I felt like I was in a totally new school.
Cassie and I planned our reunion, which we had a blast doing! We thought a picture with our deposit was a good idea. We are both in the top left, second row down.
Then it was reunion time! We rented out Missouri Spirits for a couple of hours, so everyone got time to drink, get caught up, and eat. It was SO fun!
Our classmate, Ryne, died in 2013, so we set out some pictures in memory of him. Our friend Tyler also said a couple of words about Ryne, too. It was perfect.
I tried to take pictures, but I kept getting caught up talking to everyone. I loved hearing what everyone is up to now!
This is a picture of everyone - my class, spouses, and significant others. Thank you SO much to everyone who came and celebrated with us!
Here's my class - some of the best people! Our class was really something special, a couple of the significant others/spouses made comments about how well we all meshed and got along. It was always like that! I know not everyone has such an amazing high school experience, so I'm very thankful. My 4 years at Catholic were some of the best times. It was so fun reliving some of those memories. You guys are the best!
We couldn't resist taking a Spice Girls picture - old habits die hard! And to be honest, I hope we never stop. Love you girls!
The lighting wasn't the best for pictures, but Jake got to hang out for a little bit with everyone before going home and crawling into bed. He had to be up at 2:15 to meet a group to run at 3:30.
Jake was gone by the time I got up on Sunday, which was about 7. I got home around 12:30 from the reunion, so I needed ALL the coffee before my run Sunday morning. Thank goodness I only needed 4 miles. I was pretty sleepy. I drank vodka waters (my favorite) while we were at Missouri Spirits and then switched to just water around 9:30 pm, so I didn't feel too bad considering we all had gone to Scotch and Soda after Missouri Spirits. I was just having such a good time with everyone!
After my run, Jake called to say he was headed home from his 23 mile run. I made us smoothies - we had a brunch at Brew Co. with everyone later in the morning, so we didn't want to eat a ton, but we were both hungry. I love zucchini in my smoothies!
I drank my smoothie while soaking in Epsom Salt - this kind smells SO good. Like, amazingly good. It's my favorite.
Then we headed to brunch at Brew Co! Oh my gosh - they have the BEST gravy. I'm not a huge gravy fan, but I swear they add cream cheese to theirs. It's incredible.
After brunch, we were both pretty worn out, so Jake and I headed home and napped for almost 2 hours. It was just what we needed! After that, we got up and were hungry - story of our lives, so we went to Galloway for dinner. I had the BLT and sweet potato fries. One of my favorites! Mmm.
After dinner, we decided we needed to watch a movie and relax for a little bit, so we hit up Redbox. We got Keeping Up With the Joneses - it was really funny!
While we were watching the movie, I knocked out some meal prep - I baked Jake's lunches for the week. Since it was last minute and I was hurrying, it's just chicken tenders and veggies. This will get him through Wednesday or Thursday.
I'm really excited to try these! My hair is crazy, and I'm always stretching out my ponytail holders after just a couple of times of using them. I've heard good things about these, so we will see! I get headaches if my hair is too tight, so I thought these would help with that, too.
I'm spending the day working on my dissertation again. It's crunch time right now because I want to have 3 chapters finished before we leave for Colorado next Friday. I'm halfway there, since I'm halfway finished with chapter 2. I need to just really focus and knock it out. Luckily, we have a pretty free week and weekend (finally!), so I'm hoping I can get a lot done.
Happy Monday, everyone!!!
I 100% set alarms for each of my to-do list items yesterday. And you know what, it helped!! The time absolutely flew by, but I got every single thing accomplished on my to-do list. I did add a little extra time to a couple of things, and I got back from my run about 3 minutes late, but still. I liked this method and will definitely do this again!
These two were like this when I got back from my run. All the eye rolls...so stinkin' spoiled.
After my first round of writing, I did a small arm circuit. I just did this in the kitchen and I skipped the bench press because I was a little pressed for time. I got everything else in, though. It's a good one and definitely gets your muscles burning.
i made a little protein shake afterwards with these goodies. I used to use a different kind of collagen, but I'm really liking this brand a lot! Plus, it's a little cheaper. : )
Shake and chug!
My alarm went off again after my arm circuit, so it was time to write again. Lu had been asleep in her kitchen chair next to my seat at the bar. All of a sudden, she jumps into my lap. It's pretty hard to type like this...
After another writing portion, I took a lunch break. I had some of the quinoa bowl I made for Jake - it was really good! And plantain chips because I am currently obsessed with them. Mmm. In the quinoa bowl there is ground turkey, zucchini, yellow squash, black beans, and onion. That's it! It was so easy to prep and it's REALLY good.
After lunch, I had another writing portion, then I did some core stuff. I watched a little Shameless while I did core - it made it better! ; )
While I was doing that, Lu made herself a little bed on the couch - I kicked her off! But she just looked so cute. Aspen was laying in the sun by the sliding glass doors. She doesn't love pictures, so I try not to take too many of her.
Then I made a snack and got to work again! I couldn't decide if I wanted peanut butter or almond butter, so I had both. It was a good choice!
When Lu got kicked off the couch, she moved to the recliner. I think Jake has officially lost his recliner to her.
Then I needed another snack...at this point, I think I was using snacks to get out of working...
Jake's sister, Chelsea, and his Mom, Penny, had these shirts made for his race series this summer - how awesome are they?! They're selling them for $15 a shirt, so let me know if you're interested. Penny has already ordered more because they've been so popular. We SO appreciate everyone's support!
They fit true to size and are SUPER comfortable. I love the heathered gray color, too.
Jake was down at Two Rivers riding and mapping out a course, so I dusted and vacuumed the house - yes, I was also avoiding work, but at this point, my brain was MUSH. It's amazing how clean the house is when I don't want to write! ; ) After I cleaned, I started on dinner. We had sweet potato hashbrowns (they were supposed to be noodles, but I sauteed them instead of steaming), brussels (using my favorite toppings - honey and balsamic vinegar), and shrimp and scallops. This bowl of stuff was SO good. I need to remember this meal - I really loved it and it was easy!
Thennnnn POPSICLES! <3 Jake had mango and I had raspberry.
Today is my rest day, so I won't be running. I'll stretch and roll later on. I was pretty excited about having leftover brussel sprouts, so I 100% had them for breakfast. I just love this recipe!
My high school reunion is this weekend!! My friend, Cassie, and I have been planning it since March, so I'm really excited that it's finally here. I can't wait to see everyone! I went to a private school and my graduating class was small, so we all pretty well stay in touch, which I love.
Jake has a huge training weekend, so he's going to be worn out. He planned his runs and rides around my stuff, which he did NOT need to do, so that means a lot. I have a half marathon in the morning - I'm not racing it, just using it as a training run, then I might go spend the morning with some of the girls as they get into town. <3 We are touring our high school in the afternoon on Saturday - they have done a lot of remodeling and a lot of us haven't seen it yet. Then we have a venue in town rented out just for us and we will have a taco bar for dinner! Yum. On Sunday, we are having a big brunch buffet, then going to Mother's Brewery to just hang out. I think it will be a good time!
Happy Friday, everyone! Enjoy your weekend!
I chowed down on three eggs (with Sriracha) and a piece of Ezekiel bread with blackberry jam after my run yesterday. I love toast and jam. So much. I also love PB&Js...maybe I just love jam. And bread. And peanut butter. Mmm.
These shirts are the comfiest. EVER. They're Meridian Line and we LOVE them. This is an old one of Jake's that I have stolen. Sorry!
Hot days call for huge smoothies! This had half a zucchini, half a banana. blueberries, spinach, protein powder, peanut butter powder, collagen, MCT Oil, and unsweetened chocolate almond milk. Topped with oats and flax seeds. It was good!
YESSSS!!! Picked up more popsicles for us. The coconut is my favorite! We haven't had the raspberry yet - I can't wait to try it!
Sometimes you need to sit in your robe in the middle of the day after a shower. I spent a little more time writing and icing my sore tendon. Multi-tasking at its finest.
I finally got ready, then finished off my favorite Kombucha. Sad day...guess I better drink one of the other 7 flavors in the fridge! They're all just SO good.
Jake and I were helping our friend Cassie last night, so we grabbed dinner on our way to meet her. We stopped at Cherry Picker for this deliciousness!
Both caught with food in our mouths...pretty typical!
Sam and her husband, Ryan, met us at Cherry Picker and rode with us to Commercial Street for our photo shoot. Sam and I were just trying to summon our inner model... ; )
Cassie has started her own business - a flower truck! It's called Ozark Mtn Flower Truck. You can find her at the C-Street farmer's market on Thursdays from 4-8pm and on Saturdays from 9am-2pm. Follow her on Instagram @ozarkmtnflowertruck for more information! Isn't her set-up the cutest??? I just love it.
We have been friends since we were 15! We made a photo album when we were 18 or so and called it C-Squared (Cassie & Chelsea; clever, I know) and it has ALL of the pictures we have ever taken together in it. I have it somewhere...I need to hunt it down and look at how cool we were. ; ) HAHA! Not. We need to add to it!
Aren't they cute?? I couldn't be more proud of Cassie! She's so awesome!
I had an easy 3 mile recovery run this morning, so I slept in a little and then knocked that out. Holy hot. I was drenched when I finished.
Eggs and toast again for breakfast!
My schedule for the day! I'm already 2 minutes behind. Eye-roll. But I'm determine to work work work on chapter 2! I have to take little brain breaks in-between writing, I feel like it helps my focus. Fingers crossed I can knock out a big section today!
This popped up on my Timehop today. Baby Lulu! <3 She was the cutest little puppy - I love her belly in this picture! Now I want another puppy...Jake?
Happy Friday Eve, everyone!! :)
After I taught yesterday, I ran a couple errands, then came home and ate lunch. I had this goodness and it hit the spot! It was so hot yesterday, so nothing really sounded all that appetizing. Beets in a salad are my go-to right now. <3
Nothing like needing to use a heating pad and an ice pack at the same time. EYE ROLL! The girls were not assumed.
I took a short nap yesterday, then got up and had a phone conference with one of my dissertation committee members - it went REALLY well and she helped A TON! I'm so grateful for the amazing women on my committee and their knowledge - they impress me every single day. Jake was on a ride during my phone call, so when I got finished, I mowed our backyard. He got home right as I was finishing up, so he started on dinner. Team work at its finest! We had leftover turkey tenderloin, veggies, and sweet potatoes - Jake had a LONG 16.5 mile run in the morning, so he got two pieces of toast. He shared a bite with me! I wasn't feeling Sriracha last night...I almost considered calling my doctor. That's NOT normal.
After dinner, I did a little work on my computer and enjoyed our LAST coconut popsicle...we NEED more. ASAP.
This picture will get this girl in trouble with her Dad, but she just loves to sit up on top of the couch. I think it's cute!
I spend some time rolling out my legs last night while Jake worked on his new watch. He just got the Fenix 3, but we have been having trouble getting it to connect to his phone. He figured it out last night!! He had to be up at 2:50 to meet a group at 3:30 for a long run this morning. His dedication continues to impress me. WOW. We were shooting for an early bed time. I think we finally went to bed about 9:30, which is late for us. I know he's going to be tired today. I could NOT sleep. As soon as I laid down, I started thinking about my dissertation and some of the things my committee member had mentioned. I started making a list in my head of what all I wanted to change/add, and then I just couldn't sleep. I kept tossing and turning, but I didn't want to wake Jake up, so I moved to our guest room for a little bit. I think I finally fell asleep about midnight. I heard Jake's alarm go off at 2:50, so I got up and talked with him a little, then went back into our room and slept until about 6:15.
When Jake left for work about 6:40, I decided I was going to run on the treadmill later in the day because I wanted to start working on my dissertation. I told him that as he was leaving and he was like, it's REALLY nice outside...(he knows I'd rather run outside, no matter what.)
I also knew that if I ran now, I would feel much better and then have the rest of the day to work. So, before I could even think about it, I threw my running shoes on and hit the pavement.
My run today was MUCH better than yesterday's! Thank you to everyone for your words of encouragement yesterday - you guys ROCK!! <3
I got a little over 5 miles in, then walked home. It felt nice to slow down and relax a little.
So, I'm REALLY bad at taking constructive criticism, like, the absolute worst. I take everything personally, which usually ends with me crying or something dumb like that. Well, Jake has learned this, so I got these texts from him after my run. I knew he had checked my Strava when I got the text about recovering. I guess his compliment lessened the blow. ; ) He really is the sweetest. And he's smart, so I know I need to listen to him. I didn't get upset!! And from now on, my Wednesday runs will be RECOVERY. I promise.
My girlfriend, Alyssa, shared this yesterday and it made me laugh SO hard! I panic every single time I have to use a chip reader. I feel like I'm going to mess everything up!
I'm spending the day working on my dissertation! Fun, fun stuff. Actually, I'm kind of looking forward to it today because I have a PLAN! I want to finish chapter 2 by next Wednesday/Thursday...it's 30ish pages, sooo that's a lofty goal, but I'm going to try! Fingers crossed.
Happy Wednesday, everyone!
Breakfast Monday was a veggie scramble and steel cut oat. Beets, eggs, and mushrooms might just be my new favorite breakfast combo!
This girl, just cuddling her baby. She and Lu fight over that toy ALL. THE. TIME.
I worked for about 3 hours on my dissertation and then took a lunch break. I had another wrap with cherries. Those chicken tenders turned out really good, I need to remember the recipe!
Excuse the messy writing, I was rushing, but we finally got back to planning meals again. This summer has been so busy with us traveling and training, so we haven't been as consistent as we would like.
Lu in her usual spot while I work! Not really sure how this is comfortable with her booty hanging off, but she slept like this for a long time.
I ended up doing a small leg circuit as a break yesterday. I just needed a brain break! This made my legs burn!
Trying to workout with these two is impossible! They were either licking me to death or playing tug-of-war underneath my legs.
And then they stole my yoga mat. They couldn't care less about what I'm doing until I start working out or doing something else on the floor, then they won't leave me alone!
I love Kombucha and I think the ginger flavor is probably my favorite. I had forgotten that I bought a bunch last week - I was so pumped when I found this in the fridge!
When Jake got home from work, we ran some errands, the last of which was our favorite - picking out a new bourbon! Each time we go, we try to get one we haven't had before. I think my favorite is Bib and Tucker. If you haven't had it, it's AMAZING. We went with Basil Hayden's last night, which we both had only had mixed in drinks. I think we prefer it mixed into drinks, not as something to sip on. But it was still good!
When we got home, I started on dinner and Jake looked over my training plan. Have I mentioned he's the best? He's so good at this kind of stuff and caught a lot of mistakes I had made. I tend to get overzealous and attempt too much. He spent like an hour and a half working on this! THANK YOU!
Dinner was turkey tenderloins, sweet potatoes, and cauliflower fried rice. With Sriracha, of course! BBQ sauce on sweet potatoes is a MUST. Jake also added ranch...not real sure about that...
After dinner, I had some work to do and Jake organized some stuff in the garage. I had a popsicle and iced my sore tendon while I worked. : )
When we both finished, we sampled our new bourbon and read up on some Altra stuff. We are both SO impressed with these shoes. I still switch between Brooks and Altras, just because I love both, but Jake has fully switched and he LOVES it. I'll probably end up taking the plunge, too! Jake is an ambassador for Ames Adventure Outfitters, which is a company that reps Altra, which is how we got started running in them. I've never worn such comfortable shoes. Ever.
We put these two to sleep - Aspen in her mess of blankets on the floor and Lu in her spot under the bed. We were in brushing our teeth, and I see Lu sneak in, set Cheetah (their toy) on the bathroom floor, then walk out backwards while wagging her tail, staring at us. I died laughing. Well, as soon as Aspen heard us laughing, she had to get in on the action, so now they're both out of bed. Eye-roll. Aspen sees Cheetah and all of a sudden, it's on. They're wild and dragging each other around the room with this dang toy. It was hilarious.
We eventually get the toy away from them - mean Mom and Dad, and get them back into bed. Here is how Aspen sleeps every night. No joke. Three blankets...
I did not sleep very well, so I was struggling when our alarms went off at 4 am. TMI warning!!! I also woke up with cramps, so a run was the LAST thing that I wanted to do. Jake needed 10 miles with a track workout in the middle and I needed 7, with a 30 minute tempo in the middle. We decided to do our warm-up together, then split up for our workouts. Well, we got almost a mile away from the house and I was doubled over in pain. Being a girl is hard sometimes! Jake was on a really tight schedule, so I told him to go on and that I was going to go back to the house. I was mad. I tried to run home, but that wasn't going to happen. About the time I walked into the garage, the pain subsided and I felt totally normal - this happen almost every month, so I'm used to it, unfortunately. So, I started again. I decided to run the same loop Jake was, just in case I could make it to the track before he was finished. I wanted to run our cool-down together because he has a long ride after work tonight and won't be home until later. I was going to be over my mileage in doing this, but it was just a longer cool-down than I had planned, so no biggie (Jake already got onto me for not following my plan!). I did my tempo, which HURT. My right leg fatigued much faster than it should have, but I'm going to blame cramps. ; ) Anyway, I made it to the track JUST as Jake was finishing, so we got to run home together! <3
When we got home, I sat on the garage floor for awhile. I was worn out.
I teach at MSU on Tuesdays, but I needed to stretch and roll with how dumb my leg was being. I will roll again tonight, too. And ice. Coffee and foam rolling on the floor before I showered.
Breakfast was steel cut oats, half a banana, blueberries, peanut butter, and honey. It hit the spot!
I hate this fly.
Still obsessed with these songs! They're good running songs for a warm-up or cool-down.
Like I said, I taught this morning, then ran some errands. I have a phone call with one of my dissertation committee chairs this evening, which I'm kind of nervous about. I think I'm going to be nervous until I walk across the stage and graduate in May...I'm going to spend the day working on my dissertation, mowing, and cuddling my girls. : )
Cheers to Tuesday, friends!
I write about whatever is going on each day. I want to use this space as a place to document my dissertation and training journeys.
