After my run yesterday, I went to the DMV to drop some stuff off for Jake. I didn't there until almost 11, so I was worried it was going to be CRAZY busy. That place is always nuts. Luckily, I was in and out of there in 20 minutes! Our DMV just moved locations and the new place is pretty nice!
Here's a 10 minute ab workout to try! I like to go through it two or three times -it's a good one!
I am obsessed with collagen peptides. I've had a couple people ask me which brand I use. I have tried a couple different ones, but this is my current favorite. It blends really well and it's unflavored. I think it really does help my joints! I'm fighting a little knee stuff right now, just a small tweak, so I'm icing, drinking my collagen peptides, and taking a glucosamine tablet.
For lunch I had a smoothie (with collagen peptides mixed in) and leftover beets from dinner Wednesday night.
My smoothie matched my eyes, which I was pretty excited about. (It's the small things!) Also, huge shout-out to Jo Ann at Acacia Spa for my beautiful lashes!! Lash extensions are my guilty pleasure. I don't like spending time in the bathroom getting ready, so I hardly wear make-up. Having lash extensions make me feel like I did something make-up-wise, which is so nice! She's the best.
After lunch, I did a little work on my dissertation, then got a little arm circuit in. I did 3 rounds of different movements with free weights, a resistance band, and the rig we have in our garage. I've been working hard to get back into a good strength training plan.
Jake and I had a meeting last night to go over the Singletrack Mind Festival that we helped with over Labor Day Weekend. We ate some leftover chili super fast and then headed to the meeting. The meeting went really well and it's fun to hear all of the feedback from attendees! Singletrack Mind Festival 2018 will be awesome - be there! Lori is in charge of the event and she is incredible. I don't know how she does everything that she does - she's the ultimate girl boss!
Before we left, we had to get a front door selfie! We got a new keyless entry, so that's suuuper fun to use!
When we got home, we wanted to relax a little. I also needed a popsicle. Jake is a little terrifying in this picture, haha!
Then we moved on to some pistachios. Whoops...
The girls were busy playing with their new toys...More like fighting over one toy while the other toy just sat there. Eye-roll.
Today is my rest day!!! And I need it. I'm going to try and stay off my feet and fuel properly today. I have a long run tomorrow - I haven't decided if I'm going to run trail or road yet. I REALLY need some trail miles in...so that's what I'm leaning towards.
I love jelly, so I grabbed this from the store the other day. Blackberry and blueberry are my favorite. Jake likes strawberry best. What's your favorite jelly?? Any other flavors or brands we should try?
Toast with jelly and two over easy eggs. Mmm! Breakfast food is my favorite.
What's your favorite jelly?? Any other flavors or brands we should try?
Any big weekend plans?
I'm going to lunch with my Momma later, then Jake and I have a rehearsal dinner for our two friends, Michael and Kindal, who are getting married this weekend! We are so excited for their wedding - it's going to be a blast! I have a long run Saturday morning, then the Plank wedding! I'm sure my legs will be dead after running and dancing all night - Sunday will probably be spent chilling on the couch. I'll need to get a short recovery run in, but that's about it! I'm hoping to start hearing back about some edits to my proposal, so hopefully I'm working on IRB (who I need to get permission from to conduct my study) all next week. Fingers crossed!
I hope your weekend is wonderful! Enjoy the sunshine and cooler temperatures!
I am a sucker for getting the girls toys that I know they will destroy in a week. But how cute are these?!
Lu couldn't take her eyes off her toy and Aspen was so excited she had to close hers. Dysfunction at its finest! Lu held her paw up like that the whole time...
Lunch was the bomb yesterday!!! Two tilapia filets sautéed in lime juice and Primal Palate seafood seasoning, all on top of greens. Plus some Greek yogurt and Sriracha. Mmmm.
I was still hungry after I inhaled the fish and veggies, so I had a granola bar. Totally not Paleo at all, but I just love them.
Look at this sweet face. "Mom, wanna share you granola bar with me?"
I did a little core work after a short leg circuit. I have a love-hate relationship with ab mats...And yes, I watched Scandal while doing core!
Hot tea sounded so good on a rainy day, so I made some dandelion tea and put some oregano oil in it. I had a headache for most of the day yesterday and this seemed to help a little.
Then I sat on the kitchen counter while I iced my ankle and drank my tea, waiting for Jake to get home. We both like sitting in this spot, it's just comfortable!
We had leftover sweet potato chili and some beets for dinner! Jake LOVED the chili, which I was a little worried about. I put some cinnamon in it and he isn't a huge cinnamon fan. I filled our bowls WAY too full. Neither of us could finish them. We will have chili again tonight...I made a TON.
Then we went to the store to get new handles for our front door! Eek! We are pumped about the keyless entry!
Check it out!! We still want to paint the white trim around the window, we just haven't decided what color yet. It looks so good! Jake did the whole thing on his own. <3
I had a popsicle while Jake was working...
Then I crawled into bed to ice my hips and ankle while watching...Scandal! You're surprised, right? I'm almost all caught up! We both sleep with two pillows, so we never have sheets that 100% match. It drives me crazy. I need to get two more pillow cases for each set of sheets we have.
I got tired of watching Netflix, so I read a little while I finished icing. I've been reading this book off and on for almost a year now, which is so embarrassing. I LOVE to read, I just get burnt out after reading research articles all day. I hope to finish it tonight!
These two. Finally passed out after fighting over their new toys all day. Lu will hide one toy, then try and take the one Aspen has. But if both of them are out, Aspen will try to carry both toys around with her, which makes Lu mad. They're a disaster.
Here's the door again this morning! I really love it!
I stepped out to run and realized I matched everywhere, ha! Definitely did not do that on purpose.
The sky was gorgeous this morning! I loved starting my run when the sun was already up, it's nice to switch things up sometimes.
I got 6 in this morning and am VERY ready for a rest day tomorrow. My first two miles felt awful, so I wasn't sure how the rest of my run would go. I ended up finding my groove and feeling MUCH better about mile 3.
This view will never get old!
Oh my gosh, this was GOOD. I heated up some of that enchilada casserole I made for Jake and topped it with two over-easy eggs. Holy yum. Perfect post-run fuel!
We have a meeting later today to talk about the event we helped with over Labor Day Weekend. I'm going to do more editing and a little laundry, nothing too crazy! I need to get an arm workout in at some point, too. The days are flying by lately!
Hey, it's Friday Eve!! Cheers!
Sweet potato and ground turkey chili in the crockpot to cook all day! YUM. This is one of my favorite fall meals. Well, I could actually eat it any time...SO GOOD. It's so easy to make, too. I cut up 4 sweet potatoes, half an onion, browned ground turkey, and threw it all in the crockpot with some honey, cinnamon, diced tomatoes, tomato sauce, black beans, and water. That's it! I let it cook all day on low. I usually don't put beans in it, but we had a can we needed to use up, so I threw it in there.
Thank you humidity during my run for messing up my perfectly straight hair! Hot mess express over here.
I think we found another race to do together!! Has anyone done the Glacier Half?? It sounds amazing!
Lunch #1...leftover tilapia tacos. I was STARVING all day yesterday.
Made tons of progress on my dissertation! Eek! Also, I would be lost without my lap desk. I'm obsessed with it. I'm hoping after next week, I can start submitting my study to the university and get started on it!
Lunch #2...which I inhaled before I remembered to take a picture. It was some of the enchilada casserole that I made for Jake for lunch this week, it's really good! I also had a little protein shake with super greens and collagen in it. I was so hungry and I felt like I ate all day. I can tell I'm getting back into some higher mileage/more intense workout weeks.
After lunch #2, I had a phone meeting for a couple of hours, then I chowed down on some sweet potato chili. I LOVE Greek yogurt and avocado on top of chili. It's delicious. If you haven't tried this, I highly recommend it! Oh, and of course Sriracha. ; ) I added some honey and cinnamon to the chili, so it's spicy and sweet, which is my favorite.
Jake went to dinner with his Dad to celebrate their Leadman finish. For new readers, my fiancè and his Dad competed in a series of 5 races in Colorado this summer. They did a trail marathon, a 50 mile mountain bike, a 100 mile mountain bike, a 10k, and a 100 mile run. Jake proposed at the finish line of the 100 run - he had carried my ring the whole race. It was perfect! So, they finally got to go out, just the two of them, to celebrate! I relaxed on the couch while eating and watching Scandal. I'm trying to get caught up! I missed two whole seasons. We never use our TV, is that weird? Probably...laptops are just easier! I watch on Jake's laptop and work on mine. It's perfect!
This chili is one of my new favorites. I also had some Ritz crackers with peanut butter because I had a hill repeat workout in the morning and knew I would need fuel. I've been kind of dragging this week.
Sorry this is blurry, but I was laughing so hard at Lulu. She would start waving her arms in the air whenever I stopped rubbing her belly. We call it "swimming". She's such a goofy dog.
I try not to eat after 8 because I get acid reflux when I lay down, but at 7:53 I decided I needed a popsicle. It was delicious.
Lu stared at me like this the whole time I ate it. Eye-roll.
Then it was up get my hill repeats in! I did not sleep well last night. I just couldn't fall asleep and when I finally did, I woke up every 30 minutes or so. I wanted SO badly to hit snooze and put off my workout, especially when I finally crawled out of bed and my legs felt SO dead. I knew I needed to at least try to get a little hill workout in. I wasn't going to push it super hard, but I needed to try. I have a race challenge next month that has two trail runs back-to-back, so I need to get used to running on tired legs. I have a lot of work to do...
Side note: we got this new coffee to try tomorrow! I'm excited.
I was also STARVING when I got up, so I had a little peanut butter. I REALLY just wanted to crawl back into bed...I kind of hope it keeps raining here all day so I can take a short nap later, I love napping when it rains...fingers crossed!
My plan was to do a 3 mile warm-up, 4 hills (about half a mile each), and a 2 mile cool-down, so I would end up with 7 miles. This is the hill I use for these repeats. Where you can't see anymore is where it gets super steep and it burns so bad. I start at the railroad tracks and run to the top, which is right at about a quarter of a mile, then jog back down. The last minute of climbing is the worst. I did my 3 mile warm-up, during which my legs just felt super fatigued. I kept reminding myself that I did a hard 9 miles yesterday, so it's normal that my legs are tired. I finished up my warm-up at the bottom of the hill and started on my repeats. About halfway through the first one, my legs felt like they were going to give out. I decided to try and get at least two hill repeats in before doing my cool-down. It was a struggle to even just do that! I was really dragging today, but I'm listening to my body and not pushing it when I already feel this fatigued. Sometimes I push through fatigue, but I didn't get the feeling that this was a time for that, plus I don't know if I could've. This is my second week back on a serious plan and I know I didn't ease into it. I didn't want to push too hard and risk an injury, so I did two of the hill repeats and then a 2 mile cool-down. I ended up with 6 for the day and I'm okay with that.
I was worn out after that! I sat in the garage and stretched for a long time, then I took Lu on a little walk while Jake and Aspen ran.
Had my Ezekiel toast concoction again - it's just so good! I'm really on a hummus kick right now.
I'm going to do some work around the house today and finish up some edits for my proposal! Jake finished painting our front door last night, so we will hang it back up tonight! I'll post pictures tomorrow!
After my run, I had a piece of Ezekiel toast with hummus, turkey slices, onion, and two scrambled eggs on top. It was delicious.
After I fed this girl, she retreated to her favorite spot - her Dad's recliner.
I had a TON of grading to do yesterday, but I also NEEDED to watch Scandal. ; ) I stole Jake's laptop to accomplish both tasks. Best thing I've ever done.
This is how Aspen slept most of the day. She wanted only her nose to be out of the blanket. I would have to cover her up like this any time she got up to go outside. Is she too spoiled? Probably.
I stole one of Jake's enchilada pieces for lunch (there was actually an extra piece, so it'll be lunch for me for two days!) And it was REALLY good. I also had a small protein shake with my super greens in it since I didn't have any veggies.
Lu likes to sit in one of our kitchen chairs while I work at the bar in our kitchen. I have an office, but I like being in the kitchen better. She will cry and try to jump up onto my lap from the floor until I pull a chair over for her. Once I do that, she curls up and goes to sleep!
I got my hair trimmed yesterday! I was trying to remember the last time I had gotten it cut and couldn't...I think it had been over a year. Whoops! I don't color it or anything anymore, so I kind of forget about it. It feels SO much better. My hair lady is the BEST. She always thins it out a little for me, so it won't be so crazy when it's curly!
Getting your hair cut really works up an appetite. ; ) I had some celery, carrots, PB, and grapes when I got home.
I did more grading until Jake got home, then I started on dinner. We had tilapia tacos and broccoli.
This was SO good. I cooked the tilapia in the Primal Palate seafood seasoning and lime juice. I used garlic and garlic aminos on the broccoli. Super quick and healthy!
We watched two episodes of New Girls while we relaxed! Aspen hasn't been feeling all that great, so I let her cuddle me on the couch. Jake was obviously thrilled...
Oh, here's something weird/funny. See that red spot on my forehead? That's from having my trucker hat on backwards while sweating at the music festival on Saturday! It kind of rubber my forehead raw. How weird is that? I've never had anything like that happen before. Jake stares at it when he talks to me...
We are painting our front door!!! We bought the paint in April...this summer was just crazy busy. But it's finally happening! Jake was sanding off the old paint here. He's the best.
Lu moved her bed like this...guess she just wanted a pillow?
When you need coffee to make the coffee...100% brewed coffee this morning without this filter. It ended up working out, but I was worried the whole time.
My poor straight hair is no longer straight. Thanks, humidity.
I got 9 miles in this morning! I'm also going old school with my watch until I get my new one. I'm glad I kept this one!
Same breakfast as yesterday! Ezekiel bread, hummus, turkey slices, and egg. So good!
My friend Michelle bought my Forerunner, so I get to see her today when we meet. I'm excited! Then I have a phone meeting later this evening. I'm going to spend the morning cleaning and doing a little computer stuff, then I'll run some errands. I'm making sweet potato chili for dinner, so I'm going to throw all of that in the crockpot here in a little bit. I can't wait!
I hope your Tuesday is wonderful!
After my run Friday, I enjoyed this plate of leftover goodness - especially my favorite brussels sprouts! Mmm.
Here are some pictures of the house we will be staying in when we go to Colorado for our wedding. Isn't it gorgeous? We are SO excited for May 26th! <3 I posted a little about our plans on Friday, but it's just going to be us and our families, then we will come back home and celebrate with all our friends!
On Friday evening, I went to Branson for my Dad's 40th high school reunion. Chris St. George, who owns St. George's BBQ, catered the event and the food was OUTSTANDING.
I ate WAY too much, but it was SO worth it. Then I had this delicious cobbler. So amazing.
One of the people from my Dad's class was making shots called Red Roosters - you take a shot of Zing Zang, tequila, and orange juice. They were yummy!
This was our view for their reunion, they were staying at the Branson Landing.
Twila, one of the girls who went to my Dad's high school, made these awesome name tags! I loved seeing all their high school pictures. It was a super fun night!
Then it was up Saturday to get a long run in! I chowed down on some Ezekiel bread with PB and honey and some coffee. I wore my new rabbit tank top, which was perfect for the hot weather on Saturday.
This run was not great. It hurt REALLY bad, but I got 12 in, and I hit my 1,000 mile goal for the year! I was pretty excited about that!
12 miles for the day!
I mixed these things together for a recovery shake afterwards. It hit the spot.
I'm currently obsessed with this song! I listened to it on repeat on my way to meet friends for lunch.
Mexican after a long run, heck yeah! I had a shrimp taco salad and it was delicious.
After lunch, I was supposed to go home and work on computer stuff (whoops), but then I last minute decided to go to a country music festival at Drury University. My friend Kayla and I threw our boots on and headed that way!
It was a blast getting to spend the day with some of my favorite girls!
Some times you need a friend to reapply your lipgloss! Also, I had these nachos for dinner and they were delicious.
Jake was at a bachelor party this weekend and he sent me this picture. Isn't it awesome? I was so jealous.
I woke up Sunday starving, so I made pancakes and eggs for breakfast, which I ate in bed while doing some computer stuff. I didn't feel like running right then, so I decided I'd wait and run on the treadmill later since it was hot outside. I cannot run in the heat. I'm a baby.
I saw this on Instagram the other day...I need it!
I needed to do 6 miles yesterday, but it was SO hot and the Y wasn't open when I tried to go run inside, so I attempted to run outside but it didn't go all that well, so I only did 3. Whoops. Then Jake came home and we went out to lunch and shared this salad and these wings.
After lunch, we watched the start of a bike race downtown, then went to our friend Cassie's flower truck to get some fresh flowers. Check out Ozark Mtn Flower Truck - it's awesome! Lu and Aspen loved them!
I think some girls missed their Dad this weekend...
We had dinner plans with my parents and their good friends, so I did some meal prep before they came over to our house for a drink before dinner. Jake is having THIS enchilada casserole for lunch this week.
We went to Galloway for dinner - my guilty pleasure is vodka water with Mio added to it. So good! I also had the chicken Caesar salad, which is one of my favorites.
I was so happy to have Jake home! We aren't apart very often, but I sure miss him when he is gone.
After dinner, we spent some time looking at houses (another guilty pleasure), drinking some bourbon, and I made a to-do list on a paper towel...my life revolves around to-do lists.
Lu was passed out pretty hardcore on Jake's recliner.
Aspen hasn't been feeling very well the past few days, so I took her on a little walk/jog before my run this morning. She absolutely loves to run, so I was hoping it might make her feel a little better. She wagged her tail the whole time, but I could tell she wasn't her normal self.
I did an easy 3 miles this morning to finish up the 6 I needed yesterday. It's amazing how much weather affects my runs. I felt SO good this morning!
Definitely a little sweaty, but nothing like yesterday!
This is one of my favorite features about Strava - seeing my matched runs. Seeing small progress is motivating!
I'm getting my hair trimmed later today - I realized I hadn't gotten it cut in over a year...not good! I'm lucky that they could squeeze me in! I have some errands to run and some computer work to do today. I got most of our meal prep finished yesterday, which is a good feeling!
I hope everyone has a wonderful Monday!
I got this text from my soon-to-be hubby yesterday! Eek! We will be getting married over Memorial Day weekend (May, 26th, 2018) in Colorado! We are SO excited. We are doing a small, intimate ceremony with only our families, and then we will come back home and have a huge party to celebrate with all of our friends. It's exactly what Jake and I want, and I think it's absolutely perfect for us. Colorado is obviously so special to us (that's where we were most of the summer and also where Jake proposed), so it just made sense! I'll share more details next week. ; )
Real cool. This is what happens when you're trying to hurriedly heat up your coffee. It was ALL over. I started cleaning it up and then realized I should probably share this moment with you...
It also got all over my VERY glamorous outfit. These are my favorite sweats and they're about 3 sizes too big. They're perfect to throw on after a run when you're cold. They aren't super flattering (obviously) but after dressing up every day for work, it's kind of nice to be able to wear sweats in the middle of the day!
I had leftovers for lunch, including the brussels (I forget that's their real name) sprouts I had been dreaming of all day - it was just what I had imagined! SO good. Chicken, quinoa, and brussels. YUM.
I had a snack of hummus and pita chips later on, too. I like my hummus spicy, so I added Sriracha. You can roll your eyes at me if you want to, it's okay!
I changed out my super glamorous outfit to meet some girlfriends for a drink at Barley, Wheat, and Rye. The picture on the left was accidental, but it shows that I really did put real pants on, so there's the evidence! ; ) I enjoyed some Four Roses on the rocks. It was delicious.
Today is our friend Kimberly's birthday!!!! Happy 29th, girly! She and I decided that next year, we should have a joint Dirty Thirty party since we will both be turning 30! Funny story, I had been friends with Kimberly and her sister, Amber, for awhile before Jake and I started dating. They saw us together on Facebook after we started dating and told me that he was their cousin!! It still makes me laugh. Small world, huh? They're the best girls and I can't wait to be related to them! Another exciting piece of news, Kayla, the one who ran the hard 6 miles with me last weekend (she's on the right), just signed up for her FIRST half marathon!!! She's going to do the half in Nashville when I do the full. I am SO pumped and so so SO proud of her. She's got the racing fever, friends!
I've got some research to do today before a phone call this afternoon, then I'm going to Branson to hang out with my Dad's high school friends for a little bit. He went to high school in London on an army base, so his class is pretty close, which is awesome to me. I can't wait to see everyone! Then I'm meeting a group for a long trail run tomorrow! I'm looking forward to a relaxing weekend - I have a bunch of paperwork I'd like to get finished, too.
Happy FRIDAY! Enjoy your weekend!
So, my track workout yesterday really hurt. I was pretty miserable most of the workout, my warm-up and cool-down didn't feel all that great either, and I felt like I had really fallen apart during my last two 800s. I had forgotten that I did this workout in July, and Strava, being the amazing app that it is, showed me my matched run. The run from July is on top and my run from yesterday is on bottom. I improved! It wasn't a huge improvement, and I sure didn't feel like I improved yesterday, but it's there. And it's just what I needed to see. I've been down on myself for sleeping in late, not eating as clean as I like, feeling fluffier, and being frustrated with sitting in front of a computer all day. Quite the pity party, huh? So, I decided I could keep being grumpy about it all or just freaking change my dang attitude. I decided to change my attitude. I have a long year ahead of me, dissertation-wise, and it's not going to do me any good to let myself be negative about all the work I WILLINGLY SIGNED UP FOR (duh) because it was starting to affect other areas of my life. So, here we are - I'm sucking it up and focusing on the positives. And when I feel like throwing my computer at the wall, I'll refrain. For the most part. ; )
I ate a fairly big breakfast right after my run, but I was STARVING two hours later, so I 100% ate lunch. At 9:30AM. Chicken and veggies for the win.
I took another little break from working to cuddle with my big baby. Her face in that first picture cracks me up. She was sneaking a kiss and knew it. She's such a sweet baby.
I saw this on Instagram yesterday and was dying laughing - I totally do this!!! Does anyone else? Or sometimes I'll see a sign that says a town is 100+ miles away and I think about how thankful I am that I'm driving that distance and not running. I guess my Leadman fiancè could run that and be just fine...
I worked for another hour or so, did my leg workout and mowed the yard, then needed another lunch. Half a sweet potato and half an avocado. So good. If you haven't had BBQ sauce on a sweet potato, do it and thank me later. It's the best.
She always steals my spot. ALWAYS.
My sweet tooth has been crazy lately. I made these cookies for Jake, but I've been SO good. I've only had a bite of the dough (my weakness) and one bite of one...I think that's my bite taken out of that one on top. HA! But, I didn't really want a cookie, I just wanted something, so I had carrots, celery, and PB instead. And yes, it was a little hard to put the lid back on the cookies, but I did it!
After some more work, I had some chocolate almond milk and dark chocolate covered espresso beans. I was really hungry all day yesterday!
I took a break to do an ab circuit and when I came back into the living room from getting water, this is what I found. She is the ultimate spot thief. She had just been up on the couch (which she isn't supposed to do) on my blanket. Eye-roll.
Here are my cutie parents getting ready to go to the grand opening of the Wonders of Wildlife National Museum and Aquarium last night. Don't they look snazzy?! They had a blast.
I started on dinner while Jake weed eated and did some stuff in the yard. We had cajun chicken with quinoa and brussels. Mmmm! I told Jake it was lazy chicken, just meaning I hadn't done anything special to it and his response was, "How do you know what this chicken was like? It could've been very active!" All the eye-rolls! He always keeps me laughing. Aaaand rolling my eyes.
Now it's ready to eat...it was missing Sriracha! And a little mustard.
5 minutes later...
Then we relaxed and watched some New Girl before I went to bed at 8:30....
This is how Lulu was sleeping when I went into our room. Not sure how that's comfortable...
Then it was up to get 8 miles in! This run was hard. My legs were dead from my track workout and lifting yesterday. I think I laid in the driveway for a good 10 minutes. Jake was in the garage working out when I finished my run.
Every time he does this, I threaten to post the pictures. Gotcha! <3
I was so sweaty. I could've wrung my shirt out...I know I'll regret saying this once it's here, but I'm ready for some cold morning runs!
My sweat angel. ; )
I LOVE having leftovers to throw in with our eggs in the morning. We had leftover veggies and chicken with eggs for breakfast. I'm looking forward to devouring the rest of our brussel sprouts for lunch. Like, really looking forward to it...I was already thinking about it last night before bed.
One of my besties, Katie, got me this pillow for my birthday. Isn't it awesome? I love the Office!
These two have a pretty rough life.
I made serious progress on some stuff for my dissertation yesterday, so fingers crossed I can start the IRB process this weekend/next week. IRB is the panel you have to go through to get permission from the university to conduct your study. I'm hoping I start that process ASAP so I can get started. I ended up changing a big portion of the plan for my study, so I've been trying to get all of that new information together. I should have it finished TODAY! Eek!
Happy Friday Eve, everyone!
After my run yesterday, I chowed down on breakfast while lunch was cooking. After I worked for a little bit on my dissertation, I inhaled this! Chicken, sweet potato, and avocado. So. Good. And filling. I was stuffed after eating all of this.
Lu was passed out under our kitchen table...
I had a phone meeting in the late afternoon, then I was hungry again. An apple with peanut butter is one of my favorite snacks ever.
This is one of the pictures from the race last Saturday...it gave me a pretty good laugh! I think I was pretty focused on not curling up into a ball and laying on the grass because my legs hurt from all the hills.
For dinner, we had tilapia and veggies. This is some of my all-time favorite seafood seasoning. This company makes all kinds of spices - check them out!
YUM. I mixed together zucchini, summer squash, and asparagus and baked it all in the oven with some ghee, balsamic vinegar, and black pepper.
Dessert was a coconut popsicle for me and a Jack and Diet for Jake. We were both worn out last night. I was ready for bed at 7:30...
These are my weakness right now. I can't stop!
We watched some New Girl on Hulu and Jake loves the interactive ads. I'm not joking. I would rather watch the long ads because I can go do something in another room while I wait for the show to come back on, but not Jake. He likes the games in each little commercial...
Up when my alarm went off this morning - FINALLY. Got some good cuddles in with Lu before my run. I think she just really wanted to be fed...
Coffee and BCAAs...both definitely help with early morning runs.
Look who is back! For new readers, Jake completed a series of races in Leadville, CO this summer, the last of which was a 100 mile run. He took a month off to let his body heal, but he's been ready to start running again. He ran 6 this morning his first run back. I had a track workout and it absolutely kicked my butt. I did a 2 mile warm-up, 4x800 with a 400 recovery lap in-between, and a 2 mile cool-down. I ended with 7 miles for the day, but those 800s were brutal. I guess that's what happens when you don't do a track workout for over a month...gotta start somewhere!
Another egg and veggie scramble for breakfast!
I am doing computer stuff again today...I'm really ready to be finished with all of this. I will take a break in a little bit to do a leg circuit workout, so I'm looking forward to that. I NEED a routine again! I think it will help me stay focused.
I hope your Wednesday is wonderful!!
Jake's sweet Grandma dropped off some birthday treats for me yesterday, how sweet is she? Also, I had been CRAVING dark chocolate covered espresso beans, but I couldn't find them. I immediately chowed down on these. Thank you, Rosa Lee!!!!
Then it was computer work for most of the day!
I heated up one of those fig bars that we love for a snack - they're SUPER good heated up! YUM.
Check out this bed head! She was sleeping so hard, she was pretty out of it when she woke up. I couldn't stop laughing.
I love Oreos and I insisted on brining dessert to the BBQ last night, so I decided to make a dirt cake, which I hadn't had in FOREVER. I saw these peanut butter Oreos at the store and couldn't' pass them up. I was hoping they'd taste good on the cake!
The finished product! I highly recommend the PB Oreos! So good.
Do you ever forget about certain foods and then get really excited when you remember them? Well, it happens to me ALL the time. I had forgotten how much I love hummus! I made these little veggie and hummus containers for Jake this week for lunch - hopefully he's been craving hummus like I have...
I took a break from food prep/computer work and did a little ab circuit while watching Scandal.
Then I was hungry again, so I had this after a smoothie.
Then it was off to Katie's to see all my friends! We are both fully recovered from our race last Saturday. : )
Thank you, Katie, for hosting such a fun party! <3
We snacked on all these delicious appetizers while, Layne, Katie's boyfriend, grilled up all kinds of goodies for us. THANK YOU, EVERYONE! He grilled brats, BBQ chicken, chicken tenders...all kinds of awesome things.
We played corn hole until it got too dark to see.
Then it was inside to have cake and listen to some throwback jams...Jake and Dan rapped for us. It was hilarious!
This memory popped up on Facebook today - I broke my watch during this fall! Now I've fallen 3 more times since then...during the same race. EYE ROLL.
I am having such a hard time getting out of bed lately, it's so frustrating! I really miss the routine I was in earlier this summer. I don't know why it's so hard for me to get up at 5 AM, when we were getting up at 4:15 AM with no problem. Ugh. I like being done with my runs by 6/6:30 so I can start on computer stuff and have most of the day to be productive. This was the LAST morning I'm not getting up to my first alarm. I'm over it! Okay, venting over! ; ) I headed out for a 6 mile run with my new arm band. I got this from Academy for my race last Saturday and so far, I'm really liking it! I have the 6 Plus iPhone, so it gets annoying to hold in my hand during runs when I don't use my pack. Still LOVING my goodr sunnies. SO much!
It was hot (another reason I like to run EARLY). Get it together, Chelsea! I sat on the driveway for awhile after my run, just to cool down a little. I listened to part of a podcast today during my run - I usually listen to music, but I was just wanted something different. My pace was definitely a lot slower, but I think I will like listening to podcasts when I started getting into longer, slower distances. It's nice to have a variety!
Do you have any podcasts you love?? I listened to one today by Lindsey Hein from her "I'll Have Another" series.
I was STARVING after my run, so I threw together an egg and veggie scramble and then chowed down.
I also put some cajun chicken breasts in the oven for my lunches. They smell really good!
I have a phone meeting later this afternoon, so I'm going to spend the day working on my dissertation, an article I'm co-authoring, the two online courses I'm teaching, laundry, and maybe mowing (if I get to it). So, it's going to be a busy day!
Do you have any podcasts you recommend?
Any tips on forcing me out of bed?!
Lunch on Friday was a bowl of greens, leftover meatballs, hummus and carrots, plus some fruit.
If you have Spotify, check out this playlist. I'm OBSESSED. Talk about some awesome throwbacks!
A girlfriend, Ashley, tagged me in this on Facebook. Don't those look amazing?!
Kayla and I had a race Saturday morning, so we met at Galloway to grab dinner and properly hydrate before our early morning wake-up call!
We shared a veggie burger and fries.
Then it was up early to drive 50 minutes to our race! I chowed down on half a bagel with PB and honey.
We were both excited for this race, but also nervous. We had heard it was pretty challenging, but we knew the views were going to be amazing.
My friend, Jordan, came down from STL to run it, too! I love having girlfriends who are awesome runners, it makes races so much fun!
Jordan's boyfriend, Trevor, had a mountain bike race Sunday morning (which he placed second in!!!!), so he was our crew for Saturday morning. Thank you, Trevor!!
I ended up coming in as the 5th overall female and placing 1st in my age group! This race was HARD. I definitely had to use some tough love on myself when we climbed hills. There really weren't any flat sections in the course, and as soon as you would ascend a hill, there would be another one waiting for you. While this race was tough, I loved it and definitely want to do it again next year. This was also my last race as a 28 year old!
I posted about my amazing cross country coach a few weeks back, the one who was SO encouraging and inspiring - here he is! He's still running and kicking butt. His wife, Jenny, came in 2nd overall! They're both incredible.
We survived!!! I have to brag on Kayla a little...she had never ran anything over 5 miles before this race, which I didn't know! There is a disclaimer for this race and they encourage experienced runners only to sign up, and that it shouldn't be someone's first 6 miles. Well, Kayla KILLED it and it was her FIRST 6 mile race. I was (and still am) SO impressed. She had a goal of finishing under 60 minutes, which is impressive for this hilly course, and she beat that goal! She finished in 59 and some change. WOW. I think she has caught the racing fever and I am currently trying to get her to sign up for her first half marathon. She's awesome!
My plaque for 1st! I was laughing really hard at Kayla here because she was being such a Mom - she chased me down the hill to get pictures and it cracked me up...while awards were still going on...right where I was standing.
Then it was home to change, get our fellas, and meet friends at Early Bird for brunch! I had the lox and bagel sliders with sweet potato nugs and it was delicious!
Jake was on call all last week and this weekend, so we needed to stay kind of close to home in case he got called in, which happened A LOT. I think he had almost 30 hours of over time! But after brunch, I was pretty worn out, so we went home and I napped. Then it was off to my parents for a family BBQ! Can you tell which friend hates pictures? ; )
We had all this goodness!!! Jake's Mom, Penny, made an amazing broccoli casserole, Cynthia made an incredible sweet potato hummus, Katie brought a potato casserole which was delicious, and Kallie made an awesome homemade salsa!! My parents grilled brats and these little steak and bacon bites that I love. Everything was SO good.
I love these people! Thank you for celebrating with me, guys! I don't think my nephew, Ralph, liked me holding his paw...
My Mom made my favorite cookies - No Bakes!!! Mmmm.
After dinner, we met more friends at a bar and played Jenga! It would scare me so bad every time the blocks fell over...
Then we went to a new country concert and did some line dancing! It was a super fun night!
On Sunday, I spent most of the day cuddling my girls. Jake was still on call, so we didn't have any crazy plans. It felt really good to just be lazy!
Jake got called out to work in the morning, so I made myself breakfast and binge watched Scandal on Netflix. It was PERFECT.
Jake came home with flowers and the sweetest card ever, so we relaxed a little more, then he got called out again. Poor guy!
I think 29 is going to be the best year yet!!
Jake came home again and we were starving, so we went to Galloway and shared these nachos. About the time our food came out, Jake got called back to work, so we got everything to go and he headed to the shop.
I crawled back into bed to watch more Scandal and enjoy my BLT. I never just lay around all day, and after being out until almost 1:30 the night before, it sure felt good to just chill.
Lu was enjoying Scandal, too!
I had the rest of my BLT for dinner, then Jake called about 8 pm and said he wouldn't be home until around 11, so I took myself to get birthday ice cream. Which I ate while watching Scandal...I had a VERY lazy day...it helped that it was drizzly all day.
Then it was up Monday morning to get my first run in as a 29 year old! I did an easy 3. I don't usually run on Mondays, but I took Sunday off, so I knocked out a recovery run today.
Then I had this for breakfast!
Some of my girlfriends are having a BBQ tonight for my birthday, so we will go to Katie's house for that this evening. I can't wait to see everyone again! I'm going to spend the day meal prepping and working on my dissertation.
How was your weekend?
Anyone else binge watch anything good?
I write about whatever is going on each day. I want to use this space as a place to document my dissertation and training journeys.
