Breakfast yesterday was an egg and veggie scramble, an apple and chicken sausage, and toast with jelly.
I hope everyone had a wonderful weekend! Ours was crazy busy and feels like it absolutely flew by - I worked all day Friday on computer stuff, then we had people over before going to listen to Lyal Strickland at Creekside. We also got in a long run, family time, a Halloween party, and our engagement pictures!
Going back to Friday afternoon - This is one of my favorite snacks! Yogurt, dry oatmeal, and frozen fruit. So good!
This is such a time saver. I like to chop up all the veggies we will use for breakfast ahead of time. That way, all I have to do is throw them into the pan for a little bit, then add the eggs. So simple! Anyone else have meal prep tricks???

Work, work, work, work, work...is that song stuck in your head now? It's stuck in mine! Just lap desking it up over here...I spent all morning yesterday working on this article, minus the nap I took, which was AMAZING. Our run REALLY wore me out. I felt like I was falling asleep as I was typing, so a nap was VERY needed.
I have officially lost my favorite blanket to this spoiled furball.
I headed out Friday morning for a 5 mile jog. I had been pretty sore all last week, so I was just trying to shake my legs out. About a mile from finishing my run, I started getting some shin splint pain. Ugh. I was not happy about it. I was not about to risk an injury, so I knew our weekend running plans were going to change for me. As much as I don't love them, rest days are SO important. It's taken me awhile to learn that - I usually just run through injuries and then end up being injured ALL the time. Not a fun way to train! So, I made sure to stretch, foam roll, and ice on Friday afterward my run. I figured I wouldn't run at all Saturday.
Can't stop with this delicious breakfast!! It's so easy to make (2 minutes) and it keeps me full! You pour oatmeal into a bowl, like normal, crack an egg into it, put the normal amount of water in, stir it all up, then microwave for 2ish minutes. I top mine with PB (the winning factor) and honey, then chow down.
Lunch was this amazing kale salad kit that I love, some BBQ chicken, and some leftover green bean casserole from our BBQ last weekend - thanks, Marissa! It was delicious. I also ate this lunch at 10:30 because I was starving and couldn't wait until 11...
