Tuesday night, we were craving Cesar's Old Mexico - our favorite Mexican restaurant. It's amazing. I got my staple, the al pastor and chicken tacos, sans tortillas, on top of lettuce. It's SO good.
Jake got his three tacos, lengua, al pastor, and carnitas. He shared his lengua taco with me. It's SO good. It's tongue meat, so it's a little salty, but it's delicious.
A girl next to us had this. I asked her what it was and when she described it, we decided we needed one ourselves. It's a Pupusa - I think this one had cheese and pork inside. It's incredible.
The girls haven't left out side since we've been home. I think they missed us just as much as we missed them!
First run back home Wednesday morning! I got 7 in and it felt good! It was amazing to run uphill and be able to breathe. I DO miss Colorado, though. A LOT.
After my run, I ran some errands after my run. I snagged a smoothie for lunch from Mama Jean's, too. Mmm.
This is what we had for dinner last night. It was SO good and so, so easy! The brussels were my typical recipe - balsamic vinegar and honey. <3 Then I threw together some onion, sugar snap peas, mushrooms, and shrimp into a skillet with come garlic coconut aminos. Then Jake remembered he had gotten some brown rice packages at his race, so we added that to it, too! It was perfect! All topped with Sriracha since my acid reflux is FINALLY gone.
After dinner Lu and Jake took a little snooze on the couch.
Aspen and I joined in for some cuddles!
We went to Mother's Brewery for a little bit last night to see some of our friends. My friend, Cassie, started a flower truck - it's called Ozark Mtn Flower Truck (check it out on Instagram!), and she was at Mother's, too, so we got to see her and her husband, Nick. I hadn't gotten to see Kayla or Katie since we before we left for Colorado, so it was amazing to catch up with them. Sam and Ryan were there, too, but I failed to get a picture with them before they left.
We had fun getting to tell everyone our engagement story. I love hearing Jake's side of things, even though I've heard it a million times. I don't think this story will ever get old!
I slept in a little this morning, I think I'm still trying to catch up from last weekend. I don't know how Jake is getting up so early for work! He's tougher than I am. I got some new shorts in Colorado and loved them so much, that I ordered another pair in a different color. I wore them for the first time this morning. I had a hill repeat workout, so I thought new shorts might motivate me...
I was dragging a little this morning...I think I slept in too late. My BCAAs were definitely needed if I was going to do hills. These are my favorite - they taste like coffee!
I ended up with 5 miles total. I did a 2 mile warm-up, then 4 hill repeats on a half mile loop. Those hurt. I really struggled. I had planned to do 6 hill repeats on this hill after those first ones, but I just felt blah and my legs were dead, so I stopped after 3. I did about a 3 minute cool-down after that. Oh well! It's important to listen to your body. I think I'm still worn out and until yesterday, I hadn't run in 4 days. And I pushed my pace yesterday, so I was a little sore.
I have a love/hate relationship with hill repeats. My next race is super hilly, so I definitely have some work to do!
I have some errands to run today and then I'm getting together with some girlfriends for dinner tonight! I can't wait to see everyone. We were gone so long, I feel like I haven't seen anyone in forever.
Happy Friday Eve, everyone!!
I write about whatever is going on each day. I want to use this space as a place to document my dissertation and training journeys.
