I ended up running errands yesterday longer than I had planned, so I picked up a salad from Mama Jean's to take home with me. Holy yum. I definitely had a couple of bites in the car. This is the Farmhouse Salad and it is SO GOOD. Sweet potatoes on a salad? Yes please.
I chowed down, while watching Shameless, when I got home.
We decided to eat our dinner in the car tonight, so I'm making sandwiches for the three of us. They will have this on them, plus tomato and onion. Maybe a little mustard. Mmm.
Literally the only way I can get through a car trip. I get SO car sick. It's the worst. Dramamine really helps!

New hat + apple = more enjoyable errand running. We stocked up on some nutrition for our runs (thank you, Sunshine Bike Shop!!) and then headed home to do some carb-loading!
We had basil pesto pasta with chicken, zucchini, and mushrooms, rolls, a salad, and avocado. It was yummy!

Pretty excited to break in my new tank (if it's warm enough) on Saturday! This tank is really lightweight and breathable, so I think it'll be a perfect race shirt.
After dinner, I met these two pretty ladies for some sangria. They always keep me laughing! Things have been so busy, and I haven't gotten to see them as much as I would like. It was so nice to spend some time with them! <3
Pancakes!!! We used our Whysk protein pancake mix to make chocolate pancakes this morning.

Me when I don't take the non-drowsy Dramamine...I've slept for 12 hours of a 16 hour car trip before. I woke up VERY disoriented. And hungry.
I had a reader send me an email yesterday saying she found my blog somehow and has been reading it. She also said she recognized some of our running routes because she used to run in this area too and loved it. Her email was so sweet and made me smile so big!
I'm finishing up some packing/cleaning stuff today and we will leave as soon as Jake gets home from work! I think we are driving 6 or so hours tonight and staying at a halfway point. I let the guys take care of all the planning...I'm just here to sleep in the car and provide food. ; ) I think we are shooting to get to Leadville around noon/1 tomorrow. I am hoping to get a blog post written tomorrow, it just might be later than usual.
