Breakfast yesterday = egg casserole, toast with butter and honey, and bacon. I have to admit, this isn't my favorite egg casserole. It has zucchini, mushrooms, and jalapeños in it, all of which I love, but I think it's missing sausage or something. I'm glad that today is our last day of eating it!
I worked all morning then had a snack break - rice cake and PB.
I worked some more and took a lunch break. We had some veggies that were going to go bad, so I cooked all of them and had this bowl of goodness. I made the brussels like i always do - sautéed on the stove in EVOO, balsamic vinegar, and honey. For the beet and zucchini noodles, I just topped them with a little butter, garlic, and black pepper and cooked them at 400 for about 25-30 minutes. I warmed the chicken sausage on the stove. That's it! It was delicious. I'll have this good stuff again today for lunch.
I set my workout stuff on the bed and went to fill up my water bottle. I came back to Lu lounging on all my clothes. My shirt kind of blends in with the comforter.
Sometimes you just need to eat dark chocolate covered espresso beans before you workout.
Guys, I think I have a problem. I CANNOT stop eating this cereal...
I went to the Y and did 30 minutes on the elliptical before Health Tracks. I really enjoy the elliptical! I didn't used to love it, but I have found a new love for it. It's perfect for the days I don't run.
I met Jake at Health Tracks, then it was back home for dinner. I was STARVING. I mashed up the "meatloaf" we have been eating. It's seriously SO good. I froze the last two pieces of it, so we will get to enjoy that in a couple of weeks. I'm already excited.
Aspen sat like this, with her arms over the chair and folded in forever last night. It made me laugh.
We started a new show on Netflix - it's called The Ranch. It's pretty funny. I didn't love the first few episodes, but it's growing on me!
I took an Epsom Salt bath and was in bed by 8:30! Boom. I was worn out last night.
I have a ton fo work to do on Chapter 5 today, so I'm going to get started on that. I need to read through a bunch of research, so I think that's why this chapter is taking me so long. This is one of our last free weekend before our wedding, so I need to knock out a bunch of work. I think we have a few free weekends between now and May, but things are about to get crazy busy in our world - lots of traveling and different events coming up!
