I had a dentist appointment with my Dad yesterday and we usually go to lunch together afterwards. Well, I had forgotten about a meeting I had after my appointment, but I got done in time, so we were able to squeeze lunch in! One of our favorite places to go is St. George's BBQ - they make this sandwich for my Dad and he got me started on it at a very young age. It's amazing! If you are ever in the area and want good BBQ, go to St. George's and ask for Dr. Dorman's spicy chicken sandwich. You can thank me later! Remember how I was going back to stricter Paleo yesterday? Well, I splurged a little at lunch, but that's okay! I just ate the chicken and pepper mixture. I knew Jake would love this sandwich, so I saved half of it to take home and share with him when he got home from work. When your Dad takes you to lunch at one of your favorite places, you enjoy it!
Our goodr sunglasses came in! They are awesome. I can't wait to go for my first run in them.
I had a phone conference about defending my dissertation proposal (which happens Friday, GULP) after lunch with my Dad, then I got started on some meal prep! I made THIS breakfast casserole. I substituted ground turkey for the sausage and added 5 more eggs and about 1/4 cup more of almond milk. I haven't tried it yet, but it looks yummy!
While the casserole was baking, I started on dinner. I made THIS Paleo Taco Soup. It was delicious. We topped ours with fresh jalapeños and avocado.
I made Jake and spinach roll-up to go with his soup.
We had so much soup leftover, that we took some over to my Dad for lunch. Lulu loves visiting my parents, so she got to go with us. She's actually lucky she still got to go because she sprinted out of the house and around our neighborhood as we were trying to leave. She's in trouble here, but she's just so cute we can't stay mad at her.
When we got home, we were going to look at a few more wedding places before bed. I pulled my side of the bed down and then went to do something. I came back to this.
She immediately woke up when Jake took a bite of his cookie...
I finally managed to get into my spot, and then Aspen made herself comfortable on my legs. These dogs...and I promise we feed Aspen, that's just her build!
Almost finished with some wedding stuff! Eek!
A girlfriend posted this on my wall this morning, how amazing do those look?! I told her they were WAY prettier than mine. They look so yummy!
I was supposed to have a meeting today, but it got cancelled, so I'm getting to work on my dissertation proposal defense and finishing up some stuff for the online classes I'm teaching. I really thought I'd have a little more free time since I'm finished with my own coursework and don't have to take any more classes, but I'm beginning to think that's not going to be the case. I guess that's what I get to look forward to when I graduate in May - FREE TIME. I haven't decided if I'm going to run today or not...I woke up feeling really sick, but I feel better now. I might see how I feel this evening and go out for a short, easy run then. I really HATE being sick...I'm hoping whatever this is passes quickly!
