Our run Thursday morning was pretty brutal! It was 13° when we started, but it felt like 2°. We were both pretty cold about mile 4! But, we did it and we felt so good after! Thankful for friends who will get up early and run with me. Even in single digits.
I loved our snow day yesterday. Lu and I spent some time lounging in bed while I did a little computer work. She was extra cuddly after she chowed down on her breakfast.
These egg sandwiches ( recipe HERE) are so delicious. Only downside, there aren’t any veggies in them and I like to get some veggies in first thing in the AM. I’ve been sipping on some super greens and collagen with my sandwich to get some veggies. It works!
Guys, these egg sandwiches are the BOMB.
Do you ever have those weekends that seem like they’re going to be super easy and laidback and then by the time you know it, it’s Sunday evening and you can’t remember half the things you did over the weekend? Definitely had one of those weekends! I got to see some of my family from Iowa, though, so it was worth it!
Friday morning started with breakfast. I know people who don’t eat breakfast and I think they just be super humans. Aside from the fact that breakfast is good for you, I am starving in the AM. I could never skip breakfast.
I could not get warm after my run yesterday. Lu and I pulled up our chairs super close to the fire and cuddled with a few blankets.
My morning started off with some speed work on the treadmill. It was a little icy here, so I didn’t head to the track like I had originally planned. I like doing my speed work on the treadmill because I can hit paces a little easier, but I also don’t like doing speed work on the treadmill because my watch doesn’t sync up and show the correct workout. Not that I’m complaining! I’m very grateful to have an awesome treadmill, I just love data and want it to be accurate.
Make today great, friends! I'm going into my running workout with this in mind - I want to make myself proud.
Monday was spent getting caught up on laundry, emails, and meal prep. I started prepping for my next on-campus class, too. While I was answering some student questions from our first class together, I thought it might be fun to share some of the questions/answers with you guys. Some of the questions are about my own experiences and some are about our actual class. I wasn’t going to share the class questions/answers, but I thought they might give some insight into what my students will be doing this semester. My students this semester are going into the classroom for the first time to work with kiddos, so a lot of their questions made me smile. It was fun to think back on my first few times in the classroom and how much I grew with each year of teaching.
For those who are new to my blog, I was a classroom teacher for five years. I taught 5th grade (all subjects), 7th grade English Language Arts, and then was a Reading Specialist for 5th, 6th, 7th, and 8th. 7th graders are my favorite age! I resigned in 2017 to finish my dissertation, so I haven't been in the middle school classroom for over a year and half. I've been teaching college courses since 2015, so I just continued doing that while I finished my PhD. I just graduated in December of 2018 - which still hasn't sunk in!

I got to do so many of my favorite things this weekend! It was wonderful. Between spending time with friends, eating delicious food, and having a trail date with Jake, our weekend was full!
Friday morning started with another delicious egg sandwich. I loved having these all week, but I definitely prefer to have breakfast already prepped. It just makes it easier! I can’t decide what to have for this week. I am meal prepping today, so I guess I should figure that out.
I write about whatever is going on each day. I want to use this space as a place to document my dissertation and training journeys.
