I ran a bunch of errands yesterday, so this will be a short post. After my run, I had a banana, then I was still hungry, so I ended up just having my lunch. Leftovers from the other night! Mmm. So good. I just love brussels with honey and balsamic vinegar on them. I can't stop eating them!
After I ate I mowed, then ran errands until late afternoon. When I got home again, I decided to make some egg muffins for breakfasts on the go. I've been sleeping in this week - I start training hard again Monday, so I've let myself slack a little this week. I'm ready to get back into it!! I miss my early morning runs...but I have also enjoyed sleeping in. I didn't follow a recipe (typical) but I chopped up about half an onion, probably 2 cups of mushrooms, and I jalapeno. Then I beat together 12 eggs, added the veggies to them, and tossed in a little cheese - maybe 1/3 of a cup of mozzarella. I lined the cupcake pan with black peppered turkey, then loaded each one up! I baked this at 350 for about 20 minutes. The cooking time will change based on what you have in your muffins. That's it!

For dinner, I met a group of my girlfriends to eat and grab some drinks at Galloway. I had every intention of getting a salad because I was craving one, but then decided I needed their wings, too. Don't they look amazing?! They're SO good. Best food decision ever!
Then some of went to another little bar just down the street. We sat outside and just chatted! I'm so blessed to have such amazing friends! <3
One of them, Katey, gave Jake and I this awesome planner since I'm obsessed with planning. She also wrote us a beautiful card that made me cry. Thank you, Katey!!! You're so sweet and we love you!

We want to go on a date to celebrate our engagement, but I have a long run in the morning, so we aren't sure when we will go! Maybe Saturday.
