I loved the flavor of these! When I first tried these chips a few years ago, the texture was little bit like cardboard, but they have REALLY improved them. I love chips, so this is a healthier way for me to have some occasionally. Tortilla chips are my weakness...I think I could live off chips & salad. <3
I defend my comps Friday...GULP. This week will be spent preparing. I'm ready for the defense to be over!!! Once that's over, I'll start on my dissertation proposal - which just means that graduation is getting CLOSER!
When I got home from school yesterday, I needed to work on some homework, but it was SO gorgeous outside that I didn't want to be stuck inside. I joined the pups outside & got to work. They were obviously enjoying their sunshine lounging.
Lu sat like this & pouted because she got in trouble for being in the garden. She wouldn't move from this spot the whole time I was outside working. She was mad & let me know it!
Homework outside > homework inside. I may or may not have spent some time daydreaming about being at the lake...
When we finally went inside, Lu found a cold spot on the floor out of the sun & passed out. She's a hot mess sometimes. She stayed mad at me until she got to eat dinner. Aspen was also passed out, but on her chair. They're pretty goofy dogs!
I stopped by Mama Jean's on the way home and got some treats!!! We are obsessed with these Justin's Peanut Butter Cups. OBSESSED. They're on sale right now...go stock up! I also got some flavored ghee for my Bulletproof coffee. I tried it out this morning - YUM!
I had picked up some Chilean Sea Bass at Hormann's last week, but we ended up not using it, so I thawed it out and we had it for dinner last night. I had planned on using these three things with the filets, but then Jake reminded me that we had gotten some honey from the farmer's market that was supposed to be super good on fish, so I used olive oil, Sriracha, & the new honey. HOLY COW. It was incredible. This was also my first time cooking Sea Bass. We both loved it! It's a little more expensive than I would like...but it'll definitely be a treat we have every once & awhile!
We added sweet potatoes with honey & Sriracha, & broccoli with Coconut Aminos, onion, & garlic. It was a super easy, healthy, delicious dinner! After we ate, we met one of my high school besties & a friend of his for drinks at Sequiota Bike. It was the perfect evening to sit outside & chat!
Then it was up early to run! It was HARD to get out of bed this morning. After we were up, we sat on the bedroom floor drinking coffee, looking at past runs, & playing with our pups. I think if either one of us would've said, "Are we suuuure we wanna run this morning?", it wouldn't have happened. But, we eventually got up & hit the road. I did 5, but wasn't sure if I was going to even make that happen because my knee was bothering me a little. After 2 miles, it got a little more stretched out & wasn't bothering me as much, but still didn't feel 100%. I definitely need to foam roll & stretch really well tonight. Maybe do a little icing.
Jake said he would match me ONLY because no one would see it. Eye-roll. PICTURE PROOF. Boom, buddy. <3 But he also asked me if I wanted to match him, soooo...there's that. Make up your mind! ; )
I was repping my Go Girl shirt in honor of my race this weekend, but had to change to a long sleeve because I was chilly. The Go Girl shirts are some of my favorite race shirts!
We ran my 5 together, then Jake got 2 more in - my run is on the left & his is on the right. He KILLED it this morning.
This is Lu's permanent spot at home. I love when she tucks her front legs underneath her body - she just cracks me up! She sits here & stares out the window for HOURS. She needs a haircut REALLY bad.
Mmmmm. Bulletproof coffee with my new vanilla bean flavored ghee & cinnamon. So tasty!
This popped up on my Timehop today...it's from high school, which was definitely NOT 2 years ago, but I still had to share it. Katie is going to love me for this. That's not my handwriting, so I'm assuming she drew it? Such an artist! I also didn't write the hateful comment at the bottom. Such a mystery!
I saw this on Instagram yesterday & had a good laugh. I can't function without morning runs, so I don't know how people run in the evenings! Props to all of you who do that! It's SO impressive to me!
Happy Tuesday, friends! I need to make a KILLER playlist for Saturday. I'd love to hear song recommendations!!
I write about whatever is going on each day. I want to use this space as a place to document my dissertation and training journeys.
