On Friday morning I got this beautiful piece of paper! I officially passed comps & am ONE step away from graduation!
Lunch on Friday was leftover spaghetti squash casserole, then I decided I needed some coffee. Black coffee with an extra shot of espresso, a little bit of coconut milk, & some honey. Mmm. The perfect afternoon pick-up!
I got home after school and got a short 4-mile run in before the rain started, then it was home to roll & make dinner! Jake was still working, but we were hoping he'd get to come home for dinner.
I think the girls were bummed about the weather...they sure do love their backyard.
Jake called & said it was going to quite awhile before he was home, so I went ahead & started dinner. I sauteed onions & garlic, then added cauliflower crumbles, Sriracha, a little cajun seasoning, & some black pepper.
I used our AirFryer again (thanks Jeff & Penny!) to make sweet potato fries. I think I finally figured out the best way to make these - super thin slices & pause in the middle of the fry cycle to shake them. They were SO good. All I put on them was avocado oil & a little bit of cajun seasoning.
I also baked the wings I had marinated over night. They didn't get as crispy as I was hoping, but they were still really good.
Jake was still going to be working for awhile, so I met up with some girlfriends for a drink downtown. Rainy weather = ponytail. Always.
Absolutely LOVED seeing these two. We had a blast catching up!
On Saturday, we ate breakfast at Anton's & then walked around Lowe's for awhile. We picked up some paint samples for our front door - I think we have settled on some shade of red! We had plans to stop by a few other places, but Jake got called back into work (about 11:30), so I headed home.
I cannot wait for this to NOT be my view every weekend. Between the weather & all this work, I was not in the best mood Saturday. I didn't get nearly as much accomplished on this article that I wanted to, but I was having trouble getting motivated.
Plus, Lu is terrified of thunder & just wanted to be held. Cuddling her was more important than writing!
If I wasn't holding her, she was hidden under the bed. My poor little scaredy-cat.
I had a late lunch of leftovers from Friday.
These two were sticking pretty close - we got lots of cuddles in, but they definitely were missing their Dad. So was I.
I needed to get out of the house for a little bit, so I met Katie at Bob & Ike's for pizza and a drink. We split a Buffalo Chicken Pizza & it was goooooood.
Then Kayla & Wade joined us! Also, we had these little dessert shots. They were AMAZING. Mine was cheesecake. <3
I sure do like them. I also like the photobombers in the back. HA!
Jake got home around midnight & then got called back into work around 9 am. Poor guy. He literally worked all weekend. I slept in a little, then made breakfast. I was going to work on my paper & then run, so I needed something that wouldn't upset my stomach.
The weather turned out to be PERFECT for a long run yesterday. How gorgeous is this???
The water was moving SO fast.
I needed a long, slow run, so I tried to keep my pace between 9:20/9:40. My knee didn't bother me too badly until mile 6, and then I started running on some grass & the pain pretty well went away. I'm just trying to be careful!
I went to the store after my run & got started on our meal prep for the week. This is my favorite headband! Also, I was LOVING the sunshine. Still keeping my fingers crossed that Jake would be home soon.
Had leftovers again for lunch after my run! No complaints from me - this was almost better as leftovers.
I don't buy these very often, but they're my favorite! So yummy.
Pineapple was on sale, so I got two and chopped them both up. We will have this for breakfast. It's the perfect ripeness. Yummmmm.
Has anyone ever had these?? I saw them in the organic section & decided we HAD to try them.

Jake wasn't going to be home for dinner, so I made a big smoothie for myself. It was amazing.

I have been reading this book FOREVER. I just can't seem to find time to read. Hopefully when things slow down, I can read more. I miss it. Jake was still working at 9 pm, when I went to bed.
My alarm went off at 4:15 this morning & when I got up, I realized there was a light on in the kitchen. Jake has JUST gotten home. Poor thing, he worked almost 60 hours of overtime, with 18 of those hours on Sunday/Monday. I said hi & bye to him, then went to the Y to run on the treadmill. It was cold outside & I just wasn't feeling it. I got an easy 3 in, then went home to stretch. I'm going to hot yoga after school today, so that'll be really good for my legs.
Made an egg & veggie scramble, & had some of the delicious pineapple.
The water levels are just crazy high! And all the water is moving SO quickly. I think we are going to drive around later tonight & look at everything.
