How beautiful was this view for my track workout Tuesday morning?? We usually run in the dark, which I like, but it's nice to see the sunrise as I finish up my runs.
This made me laugh. I took the picture on the right as I was walking into our house yesterday. It looks like the same thing happened a year ago, too. Our very own neighborhood watch.
I made beet smoothies for us for breakfast out of Run Fast. Eat Slow. These are delicious.
I worked for a few hours on edits, then took a snack break. This round of edits has been the most frustrating. I only have a few things that need to be revised, but, for the life of me, I cannot figure out how to rewrite a couple of sections. I'm at the point where I want to just rip my hair out and throw my computer. I won't, but it sure sounds tempting...
Lunch was Nut Thins and a broccoli and rice stuffed pepper.
This was delivered yesterday, definitely made me cry. How amazing it this?! A super good family friend had it sent to us - thank you Erin!!! I am in love. It's so cool. It's a picture of the night sky from our wedding in Colorado.
More computer work, then cherries for a snack.
I got this email yesterday. I can't quite use that title, but it's getting closer!
Lazy girls guide to mashed sweet potatoes...the recipe I was making called for peeled potatoes, but I didn't feel like peeling, so I cut them like this. The skin peels right after they're cooked and you mash them a little!
I've been drinking a protein shake in the afternoons. I haven't been eating meat, just fish, so I'm trying to supplement my protein intake.
I told the girls to go to their kennels and walked in on this...
Guys, the most perfect avocado. Isn't it beautiful??? I stared at it for longer than I'd care to admit. And now I've been staring at this picture for too long....
For dinner last night we had sweet potato and black bean quesadillas! I kinda followed THIS recipe. Holy cow. This was one of my favorite meals! Jake was obsessed, too. They were SO good. And ridiculously filling. We were both stuffed.
After dinner, we relaxed and watched a few episodes of Gilmore Girls while sipping on some 19 Crimes. 19 Crimes is one of our favorite wines. We had the dark red blend last night and it was delicious!
Being married to your best friend is pretty cool. I've been cranky lately - this dang dissertation is sucking the life from me - so I'm thankful Jake still likes me. At least, I THINK he does...
Lu jumped up on the couch and flopped down right on top of my face. She's such a furball right now. I hate taking her to get her haircut, so I've been trying to find a mobile groomer. If you're in Springfield and know of a good place, I'd love to hear it!
I'm going to finish chapter 1 edits today. No matter what. Remember how I said I was doing my final round for that chapter a few weeks ago? I lied. I am starting to feel like I'm never going to be finished. I'm just trying to take it one day at a time! I'll get a workout in a little later, too - probably as a brain break. We have dinner with some friends tonight, so I'm looking forward to seeing everyone!
Oh, I almost forgot! I created a page for my blog - I did this yesterday, so it's still a work in progress. Check it out HERE!
Happy Wednesday, friends!
