The last of the deformed breakfast burritos...I have to be honest - I was pretty sad about these being gone. We will have to have them again within the next few weeks! Maybe the more I make them, the better I will get at rolling them up...
Then it was off to the Y to run! Remember how I said I would have to remind myself how much not running SUCKED on the days when I don't want to run? Well, yesterday was one of those days. I was just not feeling it. My hamstring was a little tight, so I just did 2 on the treadmill and called it a day. I definitely felt better after I got my run in, but it was a struggle to make myself do it. My attempt at a treadmill selfie...
Then it was off to the store to get groceries. It was a 5 bag of groceries kind of day! I am officially obsessed with Lucky's, a new market we just got here in town. The only complaint I have - they have small Sriracha bottles...We need the big ones!
Our grocery haul for the week!
Pretty excited to try this milk! Has anyone else had this before?
Lunch was leftover chicken, spaghetti squash, and quinoa.
After lunch, it was time for meal prep! I started with egg muffins.
Mmmm. These smelled SO good.
Here's the entire batch! I put some in the freezer.
Here's the recipe and nutrition for the egg muffins I made yesterday! I baked them at 400 for about 20-25 minutes - just wait until the egg is cooked through and they are firm.
I LOVE this spaghetti squash casserole - it's so easy to throw together and it's good hot or cold! Jake has to eat his lunches cold, so I try to send things that will still taste good cold.
All finished! It doesn't look much different...
Here's the recipe and nutrition for the casserole! I baked this at 350 for 25-30 minutes.
Jake's lunches for the rest of the week are spaghetti squash casserole on top of quinoa.
Here's the beginning of some chickpea curry! This was before I stirred everything up - I thought it was pretty!
After I mixed everything together:
Here's the recipe and nutrition info for the curry! I just put everything in the crockpot and cooked it on high for 4 hours.
Our chickpea curry turned out super yummy! And it made a HUGE batch.
These rolls are the BEST. They're Sister Schubert but they're the sweet Hawaiian kind. I love them!
When Bloodline is SO intense, you can't take your eyes off the screen...even Aspen, who is 100% chewing on her foot.
Up at 4 to meet Kayla and Jyssica for a run! It was 16 degrees when I got dressed.
I did some of my stretches before I ran this morning. Lu decided to join me!
I set all my weights/band/rolling stuff out before my run so I would come back and do it right after. It looks like Lu will use it while I'm gone.
I finally got to run with my girls again!! I cannot tell you how amazing this was - 4 miles of catching up and running...there's nothing better! Nashville, we are coming for ya!
I have computer work to do today, an interview with another participant, and then we are going to an event at Brew Co this evening! I'm feeling very ready to be finished with my study...anyone want to finish writing it for me? ; )
Happy Tuesday, friends!
