Okay, any time I get sick, the weirdest thing happens. It affects my head more than anything. It’s like I am in a fog. I can’t think straight or function. Does this happen to anyone else? It’s before I take any medicine, so it’s not a side effect from that. It’s awful! But in more positive news - I woke up today feeling better!! Thank goodness.

I took a legit sick day yesterday. My running coach saw my post about being sick and told me to take the day off. I was bummed because I was going to try and sneak in some trail time. So, I did nothing yesterday. I just rested. I enjoyed breakfast in bed, too. I definitely needed the off day - thankful for coaches like Carlee! <3
I have a lot of people ask me about diets (by diet I mean lifestyle, not a calorie deficiency), and meal prepping, so I thought I'd share a little about both! I am not expert and I don't have a degree in this, but this is just what worked for us! Jake and I used to follow a strict Paleo diet. I LOVED it and felt really great, but it was hard for both of us to sustain that while being endurance athletes. I am definitely not saying it can't be done, there are plenty of people out there crushing it on a Paleo diet, but it was just hard for us. I'd like to try it again, but right now, I'm enjoying lots of carbs. Paleo is often called "The Caveman Diet" because people who follow it eat foods that were around during the Paleolithic era. A Paleo diet typically includes lean meats, fish, fruits, vegetables, nuts and seeds — foods that in the past could be obtained by hunting and gathering. A Paleo diet limits foods that became common when farming emerged about 10,000 years ago. These foods include dairy products, legumes and grains (some of this info is from the Mayo Clinic - I didn't make it up). For us, the hardest part of being strict Paleo were the first two to three weeks. Once I figured out how to properly meal plan and prep our food, it didn't take any more time than I spend now!
My biggest tip if thinking about going Paleo or just cleaning up your diet, spend a few hours one day (for me, it's Sunday), to chop veggies. If you don't have time to cook that day, no biggie, but if you can prep ingredients for your meals so that you're just grabbing them and cooking, you will save a ton of time in the evenings. And you will be less likely to grab fast food or stray from your original plan since you already have your food prepped and ready. That is a go-to for me every week - I always chop veggies, no matter what. I also try to prep breakfasts and Jake's lunches on Sundays. I will sometimes prep my own, but since I'm working from home, I can easily throw my food into the oven Monday morning. Just find something that works for you and stick to it! : )

Oven Fajitas. Recipe HERE. (Leave out the sugar in this recipe to make it Paleo compliant). These are super easy to make and they're a one pan meal, so there's less to clean up. Win-Win. You can sub any protein that you'd like - we have done both chicken and steak and liked both!
This weekend went by in a flash. I subbed for a half day Friday morning, then met a girlfriend, Jyssica, for lunch at Mama Jean’s. It was so beautiful outside, so we ate on their roof. It was so wonderful to catch up with Jyss! We have both been so busy that we hadn’t seen each other in WAY too long. I had my favorite sandwich - the Firebird. So. Delicious.
Welllll, this breakfast still isn’t great, but I don’t hate it. I don’t hate many types of food, so that’s pretty typical. I will try to remake these baked oatmeal cups in a few weeks...once I’ve forgotten how terribly I messed them up this round.
I am getting used to having a handheld on longer runs. I used to hate having something in my hand, but now I’m growing to like it. I only take a handheld if I’m doing 10 or more miles.
I subbed yesterday morning for a friend, so I took breakfast on the go. These muffins are awful unless they’re in a bowl with milk, honey, and almond butter. I subbed in her PE class, so I got to wear sweats. My idea of a dream!
I spent most of the day on my computer yesterday, so I don't have much to tell ya! Oh, one bummer...guys, those oatmeal baked muffin cups I shared were awful! Jake took some to work and called me to say they were really dry, so I shouldn’t eat them by themselves. Oh my gosh. He was right. Gross. Buuuut, I did crumble them into some plant protein milk and top them with almonds butter and honey. That helped!! The flavor is awesome, but the texture is the worst.
Jake headed out of town Thursday evening for some races. I had an off day from running Friday, so we had a slow morning getting around. It was wonderful. The girls loved it, too, but we were missing Jake.
