I am seriously loving this breakfast. The sweet potato toast is so easy to make. You just slice a sweet potato lengthwise - I usually get 4 slices out of mine. Once sliced, I toast mine in a toaster two times on the highest setting. This makes the slices crunchy on the outside and soft on the inside. I have been topping ours with almond butter, chia seeds, flax seed, and honey. YUM! We have also been having egg muffins with our sweet potato toast.

Jake and I spent Monday working around the house - I tutored for two hours, then spent the day meal prepping while Jake worked on organizing our garage.
I am focusing on not eating processed foods, so I switched out my regular toast for sweet potato toast. It is delicious! All you do is slice a sweet in thirds or fourths - just depends how thick it is - and cook it in your toaster for 5ish minutes. I did two cycles on the highest setting and it was perfect. I topped ours with almond butter, flax seed, chia seeds, and honey.
We had the best weekend together celebrating our one year wedding anniversary! I can’t believe it’s been a year, but at the same time, our wedding feels like it was forever ago. A year ago last Friday, we got married at the court house here in town, then headed to Colorado with our families for our wedding celebration. It was such a fun weekend. I loved reliving those memories over the weekend. Here’s a throwback to a year ago!
Yesterday was such a fun day! I loved getting to spoil Lu (more than usual). Before we headed out for some birthday fun, I had breakfast.
The most important thing that I need you to know - it is Lulu’s birthday today!!!! My baby is 6! I can’t believe it. I spent WAY too long last night reminiscing over her baby pictures. I am SO thankful that I’ve always taken a ton of pictures. I mean, look at this precious puppy Lu in a dress with her monkey?? I can’t.
Our neighborhood doesn’t ever have to worry about any sketchy behavior - Lu and Rhea have the neighborhood watch under control. They take it very seriously. Well, Lu does. Rhea is confused.
This weekend was a busy one, but I also got to relax quite a bit, which was nice. Jake was gone all weekend at a mountain biking event, so I survived my first weekend alone in our new house!
Friday morning started with a breakfast burrito.
Thursday morning started with some easy miles with these girls. The run felt way better than mine on Wednesday did, but each mile felt really long. I think I told the girls on multiple occasions how thankful I was for them. I needed the motivation to keep going.
I meal prepped Jake’s lunches for the rest of the week Tuesday morning. I made wraps, but when I tired to fit them into containers, they were massive. Ha! I can’t help it. I always fill tortillas too full. Jake gives me a hard time when we have breakfast burritos because I like to use a fork to eat half of the stuff in the burrito off of the tortilla, then I’ll make a burrito with the rest. Is that weird? Probably. But I like it! Also, not sure if that makes sense...
