I went to a yoga sculpt class at My Hot Yoga yesterday. It kicked my butt! I had to sit on my towel in the car because I was so drenched. I'm always drenched when I leave hot yoga, but this was on another level.
I don’t think I have made egg muffins with asparagus in them in a long time - these are so good! They have asparagus, sweet potato, and turkey. Also, it was hard for me to eat that banana. I don’t like any brown spots on my bananas, I like them to still be a little green.
How is it already Monday?! This weekend flew by so quickly. We were busy every day, which made the time fly. I had a garage sale Thursday and Friday. Wow. Talk about hard work. We sold so much on Thursday, I couldn't believe it. I slept in until almost 5:30 Friday morning, then got started pulling everything out for day 2 of the sale. It was nice having fewer things to get out!
Our garage sale was a HUGE success yesterday! We sold SO much. Garage sales are a lot of work, but it sure feels good to get rid of stuff. I want to sell even more today, so I marked things super low. Fingers crossed we have another busy day! I am ready to sleep in and relax tomorrow, HA!
I just love food. So much. This egg casserole has been hitting the spot in the morning.
This breakfast casserole is the bomb. It’s so delicious. Sometimes egg casserole gets dried out, but this one is solid. All it has in it is turkey, mushrooms, spinach, and sweet peppers. I topped mine with salsa and Sriracha.
Jake had an enduro race Sunday morning. It’s a stage race for mountain biking. There were seven stages, with transitions between each stage. Riders are timed for the stages and then have some time to recover in-between. It’s pretty fun to watch! Before the races started, we had oatmeal.
As happy as I am to be home, I sure wish we were still at the beach...at least for a few more days! The AC in our van went out on Thursday, so the trip home on Friday was a little rough. 12 hours in a van with no AC in 100° heat was not super fun.
Thursday was our last full day in Gulf Shores and we spent it exploring. That morning, we grabbed breakfast at the Ruby Slipper. It was delicious!
We slept in until 8:30ish Wednesday morning. When we got up, Jake made coffee and I made breakfast. We had oats again with collagen, peanut butter, and honey. I'm glad I brought some food with us. I think we are going out for breakfast this morning.
We finished up driving Tuesday morning, so we had coffee and breakfast on the road. Sometimes it's nice when you're traveling to have a "home-cooked" meal. I added collagen, honey, peanut butter, and a banana to our oats.
I write about whatever is going on each day. I want to use this space as a place to document my dissertation and training journeys.
