Rhea fell asleep with the tennis ball in her mouth. It was hilarious. I’m sure she just didn’t want Lu to have it.
Yesterday was a productive day, which I loved. I’m not sure when I start my new job - I have a meeting with HR today, so hopefully I find out, but I assume it’ll be next week after the holiday (Monday is Labor Day). I am trying to get a bunch of things finished since I won’t be at home every day now. As much as I enjoyed my time at home, I am SO ready to be back in a school. I’ve missed it!
I walked out to Lu just sitting on the couch like this. It made me laugh.
I cannot stop thinking about how delicious these are. And they were so easy to make! I made 15 - Jake has two and I have one. All that’s in these are 15 eggs, 2 cans of black beans, 2 cups of spinach, all cooked together. After all of that was cooked, I filled up two corn tortillas with mozzarella and then baked everything at 375° for about 15-20 minutes. YUM. Breakfast quesadillas.
Rhea got in trouble for begging while I was eating breakfast. She snuck under my legs and was staring at me like this. She’s lucky she’s cute...
I woke up Friday morning NEEDING pancakes. So, that's what I made - I topped them with peanut butter, a banana, raspberries, and syrup.
I spent the morning working on my computer, then took a break for lunch. I had a bunch of leftovers - meatballs, potatoes, and cauli rice.
It makes me laugh when she lays like this because it looks like she has no front legs.
We snuck in a walk in-between some rain showers.
I ate a lot of chocolate...
This made me laugh really hard.
Pup floor cuddles, which resulted in being covered in Rhea's hair. She's shedding like crazy right now.
Jake got home and we headed out for an early dinner date. Dinner at 5:30? Yes, please. Aaand sometimes you need to wear animal print shoes.
We went to The Rock and ordered three appetizers and shared them.
After dinner, we walked around one of the new apartments that just went up. How awesome is this pool?
I loved the apartment numbers, too.
11 years ago I was going through rush with my sorority - Pi Beta Phi. 11 years?! No way.
Saturday morning started with a run. I was excited to meet up with my girls for some miles.
Alex had 22 and Jordan and Kayla had 10 - they made a route that had a short loop for me so I could join them for my 4. They're the best. And they all crushed their runs!
Sweat wiping and mild dysfunction.
I grabbed breakfast from Panera after my run, then picked up groceries.
This is me. 100%.
Some of my favorite condiments.
Random lunch of leftovers.
I drink my coffee black, but every day, I add collagen and honey to my last cup. It's a good way to get some collagen in each day.
We headed to a wedding Saturday evening.
I may or may not have eaten this ooey gooey butter cake before dinner was served...
Sunday morning, Jake went on a gravel ride and I made breakfast, then got started on meal prep. I made banana pancakes (one mashed banana and two eggs), with some sausage on the side.
Lunches this week are veggie pasta, spinach, and chicken, with Primal Kitchen Caesar dressing.
Breakfast quesadillas - I cooked 15 eggs, two cans of black beans, and two cups of spinach, then loaded that onto a corn tortilla, on top of a little mozzarella cheese to make it all stick, then put a little more cheese on top of the mixture, then topped that with another tortilla. I baked all of this at 375 for about 15-20 minutes. That's it! So easy. (I had another baking sheet of this in the oven. I will have one and Jake will have two). White cheese doesn't seem to bother my stomach, so I am doing an experiment this week to see how I feel eating a little bit every day.
Random leftovers for lunch.
We went to Garbo's for dinner Sunday night. I started seeing how small amounts of white cheese made me feel. So far, so good.
Monday morning started off with an easy 3 miles by myself. It felt so amazing to be running pain-free.
I made a difficult, but good decision over the weekend - I am dropping from the 50k in November down to the 25k. I sat down to make a training plan and decided it wasn't smart to try and get ready for a 50k in 10 weeks. I'm not upset about this decision at all - probably because I know it's the correct one! I want to be a healthy runner for a LONG time. So, I'm going to do the 25k at Dogwood instead of the 50k.
These breakfast quesadillas are the bomb.
This picture from my junior year of high school basketball cracks me up.
Happy Monday, friends!
We have been wanting curtains for our living room ever since we moved in, but just hadn’t gotten around to getting any. I’m so glad we didn’t! I totally forgot we had these in our kitchen at our old house. They were still packed away and I just found them. I love them! Just saved myself some mulah.
I use a lacrosse ball to roll out the bottom of my feet and my legs. Rhea always thinks I’m trying to play with her, so she tries to steal it. She was carrying it around yesterday.
I love breakfast.
We had someone come and replace the windshield on our truck yesterday. Rhea watched him the entire time.
I snacked on some blueberry banana bread before I went on a ride.
Before my ride, I went to Sam’s to return something. One of my pet peeves is when people use the wrong doors to enter/exit a place. If it’s marked, use the correct door! As I was leaving, using the exit door, a lady was trying to enter the same way. She made it very obvious that she wasn’t happy with me not letting her in before I was out by sighing very loudly. I pointed to the sign and reminded her it was the exit. The sigh ticked me off. I shared this whole experience in my Instagram stories and had the best time reading everyones’ responses. They cracked me up! So here’s my PSA for the day - use the correct door!
My ride felt really flat. I wanted to call it quits after one lap (5 miles), but made myself do a second one. It was just humid and hot, and my legs were toast.
After the 10 miles, I was ready for lunch. And dry clothes.
I have loved having this lunch all week. If you like broccoli, bake it in the oven with a little coconut aminos. So delicious.
This poor baby threw up 4 times yesterday. She was acting fine, just had an upset stomach. She seems to be a lot better now!
How cool is this tank?! Thank you, Springfield FitLife! I love it. You can get yours HERE. I have a feeling they’ll go quickly, so snag one while you can!
Just a little more lacrosse ball action before dinner. I am rehabbing this foot SO much. I want to be able to run forever, so I need a healthy foot.
Sometimes you need a Cesar’s date halfway through the week. If you haven’t been to Cesar’s Old Mexico, go. I promise you won’t regret it. Get the sangria. And a pupusa.
Jake and I shared the Oceanside Fajitas and a pupusa - both were incredible. I like Sweet & Low in my salsa. I can’t stop.
How cute is this sign?? I got it at Sam’s and I love it.
It was storming this morning, so we took it to the indoor track. I got to run 3 miles non-stop with no pain. It made my heart so happy. I sure hope I am on the uphill side of this injury.
It’s supposed to be pretty rainy and stormy here today, which I love. I need to clean, do some laundry, and knock out some computer work, so it's the perfect day to be gloomy. I have my comfiest sweats on and am about to chow down on breakfast.
Happy Friday Eve, friends!
Yesterday was one of those days! I felt like I didn’t have a break until I sat down for dinner. I love being productive, but I was very ready for some relaxation and time off my feet. My foot wasn’t hurting, but it was sore, so that was a reminder to continue taking things easy.
After my run yesterday, I was STARVING. This quiche hit the spot.
Do you guys remember that time Jake proposed at the finish line of his hundred mile race? Video HERE, blog post HERE. Well, it was two years ago today and is still my favorite memory! That entire weekend was amazing. Another reason I love blogging - I have all of these memories saved forever.
This weekend was a wonderful one - we got to celebrate Jake’s birthday (which resulted in hangovers for both of us), we spent time with family, and I GOT TO RUN! I’m still taking things easy, but holy cow...it felt so good to run pain-free. I took 6 weeks off running, which was my longest time away since I was 16. It was hard to do, but definitely what my body needed. I’m hoping between running and riding, I’ll be able to get ready for my 50k in November. I'm not healed completely, so I still need to be careful - I know this foot issue could flare up again, but time will tell! I’m going to be smart with training and not do too much too quickly - I think that will be the key. As badly as I want to go out and crush a 10-miler, that is going to do nothing but damage at this point. I'm praying everything continues to go well!
Friday morning started with breakfast with my family to celebrate my sister's birthday. We went to The Big Biscuit and holy yum - their biscuits were delicious.
I write about whatever is going on each day. I want to use this space as a place to document my dissertation and training journeys.
