Egg muffins and a waffle for breakfast yesterday. Yum.
A few people asked for the egg muffin recipe - here it is! This one is super simple and only four ingredients. I mixed everything together, sprayed the muffin tins with non-stock cooking spray, lined them with the ham, then filled them up. I baked these at 350° for about 25-30 minutes. Just cook until they’re firm! Nutrition information is below, too. Enjoy!
Welp, I did it! I signed up for my first trail marathon. I’m so excited! This is a misleading picture - I am NOT doing the hundred. HA! I’m not as crazy as Jake... ; )
Two friends asked me about BCAAs yesterday, so I thought I’d share the one I use. I love the flavor of these! They’re not chalky at all. The brand is Evlution Nutrition.

I work really hard to build relationships with my students and to make them feel like they can come to me with questions/concerns/wonderings. My on-campus class had their first assignment due over the weekend. It was a Dear Chelsea letter focusing on a topic of their choosing. I LOVED reading through them and responding to each one. I wanted to share a couple that made me smile. I am not sharing these to brag about anything; trust me, I have had students that haven’t liked me. Last semester I had a TERRIBLE evaluation written about me from a student. But, that’s part of it. I’m not going to be everyone’s cup of tea and that’s okay. All I can do is what I think is best for my students and for me as an instructor. Anyway, these two letters made me feel good because this is exactly how I want students to feel. I am there to HELP them. That’s the bottom line. The comment in the second letter about me being younger made me laugh, but overall, I think my students this semester are going to be crazy successful. They’re very insightful and I have truly enjoyed getting to know them. I was a little nervous teaching an on-campus class because I’ve only been teaching online classes for the past three years, but I think I’m getting the hang of it again! It helps when you have really great students. : )
I headed to yoga yesterday. It felt SO good to stretch and move a little after spending a majority of my day on the computer. I always sip on Nuun electrolytes during class. The flavors are always so refreshing.
I made up a recipe last night and not only was it crazy simple, but it was delicious. We had pumpkin chicken, but it didn’t taste anything like pumpkin, which is good, because Jake doesn’t love pumpkin flavored things. All I did was mix together one can of pumpkin with one chunk of freshly shredded Parmesan cheese. I topped three huge chicken breasts with that mixture, then baked at 375° for 50 minutes. That’s it! It was SO good.
We had green beans and Parmesan garlic bread, too.
I just got THIS vest from Altra and I’m obsessed. I had my first run in it this morning and it’s amazing. It’s long, so it covers your tush. I was SO warm for our whole run and the vest is pretty lightweight. I think it’s my new favorite running piece! Lu needed some cuddles before I left to meet my friend, Alex.
50 minutes of easy miles and good conversation with this girl this morning! Alex just got into a 55k race through a lottery! How cool is that?? Her race is in October and I’m signing up for a 50k in November, so we will be able to train together! I’m stoked.
I’ve got lots of computer work today, plus a lifting workout, so I’m off to get started on my to-do list! Make today a great one!
